new under the sun in the food
business.
We usually end the weekly
column with our “what’s
new” items. However, we’ve
just sampled a delicious new
product from the Underwood
Kitchen and we can recom
mend H for those, who are
real corned beef buffs. We
have one in our house and
we often find ourselves boil
ing « brisket and keeping it
around for sandwiches, to
add to an assortment of cold
cuts or for reheating along
with cabbage for a hearty
main dish.

meal, hors d’oeuvres or sand

slice in the bottom of each
roll, fill with corned beef
mixture. Lightly press petal
top into filling to close roll.
Makes four sandwiches.
We made our sandwiches
for lunch by mixing the new
spread with chopped sweet
pickle /relish, mayonnaise and
a dash of horseradish.

1 teaspoon salt
Vi teaspoon cayenne pepper.
1 tablespoon lemon juice.
1 medium otiion, thinly
sliced.
Vi teaspoon butter.
Vi cup catsup.
2. tablespoons Worcester
shire sauce.
1 teaspoon smoke salt or
liquid smoke.
Combine vinegar, water,
sugar, mustard, pepper, salt
cayenne, lemon juice, onion,
and butter. Simmer, uncov
ered, for 20 minutes. Add
remaining ingredients and
bring to a boil Makes about
one and three-fourths cups
sauce.
Thick Roqaefort Salad -
3 tablespoons chopped
onion.
1 cup mayonnaise.
1 clove garlic, minced or
juiced.
Vi cup chopped parsley,
fresh or dried.
Vi cup sour cream.
Vi cup wine vinegar.
1 tablespoon lemon juice,
cheese.
4 oz. roqueford (or bleu)
Salt and pepper to taste.
Combine all ingredients and
blend with beater and blend
er. ChiH and use within day
or two. Makes one pint

Creamy Strawberry Me
1 pkg. vanilla instant pud
ding.
4 carton (8 oz.) frozen
whipped topping, thawed.
1 qt. fresh strawberries.
1 cup sugar.
Prepare pudding mix as
directed and let it set for_
five minutes. In the mean
time slice strawberries and
sprinkle with sugar and let
them rest awhile to absorb
the sugar. Fold whipped top
ping into vanilla pudding and
then gently swish strawber
ries into the prepared mix
ture. Pile into pastry shells
or into one pie shell and
eight parfaita. Refrigerate.

berries, fresh peaches or

For the past ten yean the hospital ship S.S. HOPE has car
ried its cargo of medical training, treatment and goodwill to
nine developing countries On four continents. In a world where
over half the inhabitants never see a doctor from the day they
are bom to the day they die, HOPE'S medical teaching and
treatment programs have reached countless thousands. People
who are treated or trained aboard the hospital ship never forget
the dedication of the HOPE’S doctors,' nurses and technicians.
Recently Project HOPE began health career training pro
grams for America’s disadvantaged in the Mexican-American
community of Laredo, Texas, and on the 16-million acre
Navajo Indian reservation at Ganado, Arizona.

The story is told of two men who were confined to
a hospital. They were sick with tuberculosis, and each
had been told his active life was over. In other words
the remainder of their short lives were to be lived as
invalids.
These men began clipping poems and other bits of
materials. These materials put together were mailed
to their friends who needed encouragement, with the
suggestion that anyone who wished to receive a second
issue of the little magazine send a contribution toward
the expense of printing and mailing.
To make a long story short, this publication became
known as “TYotty Veck Messages,” and the total circu
lation in 1923 was more than 200,000 copies.
What an opportunity came to these middle-aged in
valids in an isolated hospital in the Adirondacks!
