The public will take notice that the
preliminary assessment roll for the street
improvement project on Oakdale Drive
between Coke Avenue and Tyler Lane,
which was completed on the 2nd day of
March, 1973, has been prepared by the
Town Clerk. Street improvements con
sist of hard surface, asphalt, curb, back
fill, and proper drainage for that area.
The preliminary assessment roll will be
available for public inspection in the
office of the Town Clerk until the date
set for the public hearing on the prelim
inary assessment roll. The Town Coun
cil of the Town of Edenton will hold a
hearing at the Edenton Municipal Build
ing, at 8:00 P. M. in the Town of Eden
ton on the 12th day of June, 1973, for
the purpose of hearing objections to the

Since souffle creation is
nothing more than careful
attention to direction, read the
recipe carefully and follow it*
faithfully. Practice at your
leisure. Some night when you’re
feeling creative, you could
make five little souffles then
freeze them for unexpected
occasions.
When the unexpected guest or
guests arrive just pop the frozen
souffles in the oven. Each triple
cheese souffle is worth its
weight in protein and would be.
handy to serve up to that new
man in your life when he is
home for lunch or for Sunday
night supper. Balance the meal
with a fresh lettuce, tomato and
cucumber salad, a basket of hot
rolls and pats of butter. Cold
milk or tall glasses of iced tea
complete a nutritious meal.
Three-Cheese Souffle
Grated Parmesan cheese
V« cup butter
y« cup all-purpose flour
V 4 teaspoon salt
Dash cayenne pepper
1 cup milk
1 cup shredded Cheddar
cheese
1 cup shredded Swiss cheese ‘
y« cup granted Parmesan
cheese
6 egg yolks ,
6 egg whites
*/4 teaspoon cream of tartar
Sprinkle enough Parmesan
cheese in five well-buttSred 10-
oz. souffle dishes to coat bottom
and sides evenly; remove any
excess. In IV4-quart saucepan
melt butter; blend in flour, salt
and cayenne pepper* Remove
from heat; stir m milk. Heat to
boiling, stirring constantly. Boil
and stir one minute. Remove
from heat and stir in cheeses
until melted. If necessary,
return to low heat to finish
melting cheeses. (Do not boil)
Blend a little of hot mixture into
egg yolks; return all to
saucepan and blend throughly.
Transfer sauce to large bowl. In
a small mixing bowl beat egg
whites until foamy. Add cream
of tartar and beat until soft
peaks form. Fold egg whites
into cheese sauce. Turn mixture
into souffle dishes, filling three
fourths full.
For variation, fill three
souffle dishes three-fourths full
with cheese mixture. Add
approximately one-third cup
chopped cooked poultry or
seafood or chopped, cooked,
well-drained broccoli or spinach
to the remaining mixture and
fill two other souffle dishes'
three fourths full. For imme
diate, service, bake one or more
souffles in preheated 350 degree
oven 30 to 35 minutes. Serve
immediately. Carefully wrap
remaining upbaked souffles in
freezer wrap and freeze up to
one month. To bake frozen
souffle, unwrap and place
directly from freezer into
preheated 300 degree oven for
about one hour and 10 minutes.
Recipe make five souffles.

house for a late, light supper
starring hot Cheese ’n Bacon

convenient frozen waffles and
top them with a zesty,
fullbodied cheese spread. The
Wafflewiches makes satisfying,
hearty fare and call for the
simplest accompaniments such
as an assortment of vegetable
relishes and perhaps some
plump ripe strawberries for
sugar dunking.
Cheese-Bacon Wafflewiches
6 bacon slices
2 pkg. (3 oz. each) cream
cheese
V 4 lb. American cheese,
| grated
„ 1 tablespoon chili sauce
* 6to 8 drops liquid red pepper
t seasoning
1 pkg. (10 oz.) frozen waffles
l Heat oven to 400 degrees.
1 Pan-fry bacon until crisp; drain
on absorbent paper. Beat
together cream cheese,
American cheese, chili sauce
and red pepper seasoning until
well blended. Crumble bacon
into mixture and stir until
combined. Place waffles on
cookie sheet. Heat about seven
minutes or until crisp and hot.
Spread each waffle section with
cheese mixture. Return to oven
about five minutes or until
thoroughly heated. Makes six
servings.
