The pineapple flower with the dark raisin center is a special “May flower” for a special person. A Memorial Day picnic ends sweetly with Honey-Apricot Holiday Cake. A topping of apricots and honey is chewy with coconut, a combination compounding enjoyment of the hearty cake. Peanut Butter Party Loaf 2% cups sifted all-purpose flour % cup sugar 4 teaspoon baking powder 1 teaspoon salt 1 egg Hi cups milk 1 cup natural cereal plain or with raisins and dates 1 cup smooth peanut butter Heat oven to 350 degrees. Grease a 9x5-inch loaf pan. In large mixer bowl sift together flour, sugar, baking powder and salt. Add egg, milk and peanut butter. Beat on medium speed two nlnutes. By hand, stir in cereal. Spoon batter into prepared pan. Bake 50 to 55 minutes. Loosen edges with a spatula; turn out on wire rack. Cool completely. Wrap tightly; let stand 24 hours to insure better Mend of flavors and easier slicing. Serve with your favorite preserve or jelly. Pineapple Upside Down Corn Bread 1 can (20 oz.) sliced pineapple, drained V* cup dark seedless raisins Vi cup firmly packed brown sugar 2 tablespoons butter or margaine 1 cup sifted all-purpose flour 1 cup enriched corn meal 4 teaspoons baking powder Vi teaspoonsalt Vi cup sugar 1 cup milk 1 egg Vi cup butter or margarine, melted Heat oven to 425 degrees. Grease a nine-inch square baking pan. Fill center of each THE CHOWAN HERALD slice with raisins. Combine brown sugar and butter; mjx well. Sprinkle brown sugar mixture over pineapple and raisins. In mixing bowl sift together flour, corn meal, baking powder, salt and sugar. Add milk, egg and butter. Mix well. Pour corn bread over pineapple. Carefully spread batter to completely cover pineapple. Bake 20 to 25 minutes. Let stand five minutes; invert pan onto serving plate. Serve warm. Hooey-Apricot Holiday Cake % cup butter or margarine Vt cup sugar 2 eggs IVt cups sifted all-purpose flour Vi teaspoon salt % cup milk 14 cups quick or old fashioned oats, uncooked Vi cup coarsely choppeddried apricots. One-third cup shredded coconut Vi cup butter or margarine, soft One-third cup honey Heat oven to 375 degrees. Grease a nine-inch square baking pan. In mixing bowl beat butter and sugar together until creamy. Add eggs; beat well until light and fluffy. Sift together flour, baking powder and salt. Add to creamed mixture alternately with milk, blending well after each addition. Stir in vanilla and oats. Pour batter into prepared pan. Place dried apricots in a small bowl. Pour boiling water over apricots to cover. Cover bowl; let stand five minutes. Drain apricots. Sprinkle apricots and coconut over top of cake batter. In a small bowl combine butter and honey; mix until smooth. Spoon honey mixture over apricots and coconut. Bake in preheated oven 25 to 30 minutes. Cool completely on wire rack before serving. Reserve Unit Receives Best Rating A North Carolina Coast Guard Reserve unit has been selected as the best reserve unit in the Coast Guard. Winner of the annual Reserve Officer Association Congressional Award is the Coast Guard Reserve Unit at Elizabeth City, under the Commandos Lt. Cmdr. Henry H. Odum of Suffolk, Va. The ROA Congressional Award is given annualy to the Coast Guard Reserve unit it considers to be the most outstanding in terms of the “citizen sailor” concept. Ceremonies marking the award will be held May 17 at the Coast Guard Air Station in Elizabeth City. One weekend each month the 60 officers and enlisted men of the Elizabeth City unit - nearly all of them residents of communities in Northeastern North Carlina and Southeastern Virginia - support a variety of regular Coast Guard activities. In addition, they have used their skills -- developed through both training in the Coast Guard and in their civilian careers - in a number of substantial construction projects at the Elizabeth City Coast Guard Air Station. Projects included construction ’of an air station communications center office, rebuilding of the reservists’own drilling facility and construction of two classrooms for the aircraft repair and supply center. By one estimate, having the reservists build the classrooms alone saved the Coast Guard about >75,000. In addition, members of the reserve unit perform tasks one weekend each month that normally are performed by regular Coast-Guardsmen at the air station. These include - preparation of meals and operation of the base dispensary.
