Fun With Food _ ->m& JPt From The Herald Kitchen By MILDRED HUSKINS Our love affair with sand wiches didn't stop with the BLT or hamburger, but has seen the rise of croissants, tortillas, eggroll skins as sandwich wrappers. We have even discovered another ethnic bread from the Mediterranean -- pita - with its handy pocket for stuffing. Americans were not the first to layer assorted foods between two slices of bread and call the concoction a sandwich, but American culinary scene has carried sandwich making to an art. Perhaps it's the appeal of dis pensing with flatware for ba sic finger-to-food contact, or maybe it's the endless possi bilities of flavors and textures that can be contained within the not-so-humble sandwich. Whatever the reason, American cooks continue to borrow ingredients and fla vors from many ethnic cuisines to create new hand held meals. This Greek-style pork sandwich is a quick adaptation of the Greek gyros, traditionally spit-roasted beef and lamb, shaved thinly and tucked inside pita. These American-style Greek sand wiches could become a quick lunch in the White House pri vate dining room if Gov. Michael Dukakis claims the Democratic nomination at Atlanta and goes on to win election in November. Topped with a dill spiked yogurt sauce, these sandwiches bear a strong re semblance to gyros without all the work. Today's pork offers a new look that may become one of our favorites for healthful meals. The hog of today is 50 per cent leaner than it was 20 years ago. Many pork cuts, like the lion, tenderloin, and ham, offer a low-fat, low calorie source of nutrients. A three-ounce serving of lean pork contains about 200 calo ries, rich in iron, zinc, and B vitamins, pork fits into a fit ness minded diet. Greek-Style Pork Pocket Sandwich 1 pound boneless pork lion 1/2 cup olive oil 1 tablespoon prepared mustard 1/2 cup lemon juice 1 teaspoon garlic, minced 1 teaspoon oregano, dried 1 cup plain yogurt 1/2 cup cucumber, peeled and chopped 1/2 teaspoon garlic, crushed 1/2 teaspoon dillweed 2 pita loaves, halved 1 small red onion, peeled thinly sliced Cut pork crosswise into thin slices. Slice them into strips. Combine olive oil, mustard, lemon juice, garlic and oregano. Pour over pork slices. Cover and refrigerate for 1 to 8 hours. Drain mari nade from pork slices and roast pork slices in preheated oven at 45 degrees. Roast until crisp, about 10 minutes. Open each pita half to form a pocket. Distribute pork among each half. Serve with chiliad yo gurt mixture of cucumbfer, garlic, dill. Top each pita sandwich with sliced onions. serves 4. Park and Red Chili Stir Fry 1 pound lean boneless pork, cut into thin slices 2 tablespoons cooking oil 4 cloves garlic, chopped 3/4 pound green beans, cut in 2-inch lengths or 1 pkg. frozen cut beans, defrosted 2 teaspoons sugar 2 teaspoons soy sauce 2 small red chili peppers, thinly sliced or 1/2 teaspoon red pepper flakes 1 teaspoon shredded fresh ginger or 1/2 teaspoon ground ginger 1 teaspoon sesame oil 1 teaspoon red wine vine gar Trim any fat from pork, if necessary. Heal oil in a heavy fry pan, add garlic and stir fry until light brown. Add pork, cook and stir until lightly browned. Add green beans, stir fiy until beans and pork are done, about 8 min utes. Push meat and beans to one side of fry pan. Add sugar, soy sauce, chili peppers and ginger; stir to dissolve sugar. Add sesame oil and vinegar. Stir to coat meat and beans. Serve immediately with cooked rice or shredded lettuce. Serves 4. 5K Run Is Slated The Perquimans County Parks and Recreation Department will host a 5K Run on Saturday, June 4 at Missing Mill Park in Hertford. Registration will take place from 8-8:45 a.m. The race will begin at 9 a.m. Those whose entries are •postmarked before June 2 will be charged an entry fee of $4.00. Local Students Are Honored GREENVILLE - A total of 148 outstanding students at East Carolina University have been inducted into the ECU chapter of Phi Kappa Phi honor society. The new members include 68 seniors and 80 juniors, and are residents of 34 North Carolina counties; the states of Delaware, Maryland, Massachusetts, New Jersey, New York, Ohio, Pennsylvania and Virginia; and one foreign nation, Norway.
