Richly flavored Paprikash Pork Chops with Apple Wild Rice is ready to serve in about 15 minutes. The paprika and thyme-seasoned butterfly pork chops are served with a creamy onion sauce. Bright apple bits add a hint of sweet ness and crunch to the rice. Savory Scallops with Spinach Wild Rice 4 slices bacon, diced 1 3/4 cup water 1 tablespoon butter or mar garine 1 pkg. (5.2 oz.) Long Grain & Wild Rice Chicken Stock Sauce with Vegetables 1 pound bay or sea scallops, patted dry 1 large clove garlic, minced 1/2 teaspoon red pepper flakes 2 tablespoons thinly sliced green onions 1 1/2 cups firmly packed spinach leaves, cut into strips Cook bacon in 10-inch skillet over medium heat un til crisp. Remove to paper towels with slotted spoon; re serve. Pour off all but 2 table spoons drippings. Combine water, butter and contents of rice and seasoning packets in saucepan. Bring to boil. Cover tightly and simmer 5 min utes, or until desired consis tency. While rice simmers, cook scallops in drippings with garlic and pepper flakes over medium-high heat until cooked through, about 3 to 5 minutes. If necessary, drain cff excess liquid. Remove to serving plate; sprinkle with reserved bacon and green rnions. Stir spinach into rice; serve along with scallops. Makes 4 servings. Paprikash Pork Chops with Apple Wild Rice 1 tablespoon paprika 1 teaspoon thyme 3/4 teaspoon salt 1/4 teaspoon pepper 4 well-trimmed butterflied Doneless pork loin chops, 1/2 nch thick 3 tablespoons butter or margarine 1 large onion, thinly sliced md separated into rings 13/4 cups water 1 pkg. (5.2 oz.) UNCLE BEN's Long Grain & Wild Rice Chicken Stock Sauce vith vegetable 3/4 cup coarsely chopped •ed apple 1/3 cup thinly sliced green >nion 1/4 cup dairy sour cream Combine paprika, thyme, salt and pepper. Sprinkle svenly over both sides of pork hops. Heat 1 tablespoon of the rntter in 10-inch skillet over nedium heat. Add onion; ook and stir until tender, ibout 5 minutes. Remove mion; reserve. Melt remain ng 1 tablespoon butter in ikillet. Add pork chops; cook i to 6 minutes per side or until ooked through. While chops ire cooking combine water, emaining 1 tablespoon butter md contents of rice and sca nning packets in saucepan. Iring to vigorous boil. Cover ightly and simmer. 5 min ites, or until of desired con istency. Stir apple and green nions into rice. Remove hops from skillet; keep trarm. Add onions to skillet; teat through. Turn off heat ind stir sour cream into - nion in skillet. Spoon onto linner plates; top with pork hops. Serve alongside rice, lakes 4 servings.
