Take advantage of time-sav ing tricks in the kitchen and the season's fresh vegetables by preparing a quick, zesty gaspacho that features a cor ner-cutting ingredient — Blood Mary mix! But cutting corners on preparation doesn't mean cutting back on flavor. This simple speed-scratch Easy Garden Gazpacho is just as fla vorful as more time-consum ing recipes but is made entirely in the blender and thickened with a portion of an English muffin. Pair well-chilled gazpacho with a Mediterranean-style antipasto tray for a light, el egant summer meal. Let your supermarket or deli help with the antipasto tray by purchas ing an array of ready-made dips and spreads such as hummus, tapenade (a Mediterranean ol ive spread), or a creamy guacamole. Serve the toppings with triangles of English muf fins topped with garlic butter and grated cheese then toasted, and invite everyone to help themselves.
