The holiday season is an idea] time to use citrus fruits in muffins, orange bread or cake because it's harvest time in Florida. Oranges and grapefruit and their juices have long been known to be excellent natural sources of vitamin C. They also provide potassium, fiber and folic acid but have no fat, cho lesterol or sodium. This quick recipe for Orange Nut Bread is fun to make and produces delectable results. Orange Nut Bread 2 Tbsp. butter or margarine 1/2 cup boiling water 2 cups sifted flour 1 tsp. baking soda 1 tsp. baking powder 1/2 tsp. salt 1/2 cup orange juice 2 Tbsp. grated orange rind 1 cup sugar 2 tsp. vanilla legg 1/2 cup chopped nuts Melt butter or margarine in boiling water in medium bowl. Beat granulated sugar, butter and vanilla ex tract together in large mixer bowl until creamy. Add eggs, one at a time, beating well af ter each addition. Gradually beat in flour mixture. Stir in 1 1/2 cups morsels. Pour into greased 9-inch-square baking pan. BAKE In preheated 350° F. jven for 25 to 30 minutes or mtil wooden pick inserted in :enter comes out slightly dicky. Cool completely (cen :er will sink) in pan on wire r ick. MICROWAVE remaining norsels in heavy-duty plastic )ag on medium high (70%) lower for 30 to 45 seconds; mead. Microwave at additional L0- to 20-second intervals, cneading until smooth. Cut a iny corner from bag; squeeze o drizzle over brownie. Chill 'or 5 minutes or until drizzle is irm. Cut into squares. Makes 6 brownies. Holiday Cheese Ball is made with Cheddar cheese, cream cheese, olives and savoi^ smoked, sliced beef. In large bowl, with mixer at medium speed, thoroughly combine cheeses, sherry, ol ives, Worcestershire sauce and salts.-Shape mixture into a ball; wrap in foil; then refrigerate until needed. About 30 minutes before serving, remove foil from cheese ball and reshape into ball with hands; then roll it in the beef until it is completely coated. Makes a 3" ball. Piccalitoes One 2 1/2 oz. pkg. smoked sliced beef, finely chopped 1 teaspoon minced onion 1 tablespoon butter or mar garine One 3-ounce pkg. cream cheese Saltines or crisp rye crack ers Cook beef and onion in but ter or margarine until beef is slightly crisp.
