Shari Continued From Page 3-B -Cold food should be cold to the touch and frozen food should be rock solid. Canned goods should be free of dents, cracks, or bulg ing lids. Packaged foods should have no rips or tears. Also, check use-by dates that are on the pack age. ,Don’t buy anything that is on the shelf past the “sell by” date. Cooking Turkeys It is important not to stuff the turkey prior to cooking it as the bread and meat juices in combi nation make a perfect place for bacteria to grow. Make sure that you roast your turkey in an oven that is 325° F. degrees or hotter and insert a thermometer in the large meaty muscle on the inside of the thigh without touching the bone. Dark meat turkey pieces are done when the thermometer reaches 180 degrees or above. En sure that you cook your turkey long enough and allow enough .time for cooking and cooling prior to carving. For example, a 14 to 18 pound turkey will take 3 3/4 to 4 1/4 hours to cook. Follow the recom mended directions on the pack aging that your turkey comes in. For those of you who purchase turkeys with the pop-up ther mometer this will take the guess work out of knowing when the turkey is done. Storing Leftovers Put leftovers into small con tainers so they will cool quickly when placed in the refrigerator. This will help the other foods in the refrigerator maintain a tem perature of less than 40 degrees while safely cooling your left overs. If you cannot use up left overs quickly, you can freeze the turkey, stuffing and gravy for up :to30 days. If you plan to eat your leftovers during the following ;w$ek, remember that turkey ;should be used within 3 to 4 days and stuffing and gravy within 1 to 2 days. Little develops classroom environment like home I Determination, ingenuity, and creativity led Brenda Little, Life Skills teacher for Exceptional Children at Chowan Middle School, to de velop a classroom environment for her students that is eminiscent of home. With the help of many volun teers ,and donations, Little has turned her room into a combi nation multi-living area and classroom. The school system installed a mini-kitchen in her class for teaching purposes, but she decided to take the concept of developing life skills further. Little’s classroom features a living area, complete with so fas, end tables and a coffee table and a dining room filled with many accessories that you would find in a home. “In my class we focus on placing the specific skill within the context of a real-life situation. I try to expose these children to many varied types of skills that are needed for independent living,” she said. Little said that she could not have designed her classroom to resemble a real homelike set ting without the support of many generous people and busi nesses. “All of the donations have been put to good use and are greatly appreciated by me, my students, and our school,” she said.
