Or j Leonard spent a day in the* county the first of the week taking cultures then returned on Saturday to read the 1 results off the tests. According to Dr. Henry L. Shaw recently president of the American Medical Asosciation, and now a eon sultant of the New York State Department of Health, milk is one of the most desirable human foods as it con. tains all the materials necesary to support life, including proteins, carbohydrates. mineral matter, fats and water. "Milk, however." points out Dr. Show, "i3 one of the most difficult foods to produce and distribute with absolute safety to the consumer. !t is often a vehicle for the transmission of tuberculosis and infectious liseases, and is responsible for more sickness than almost any other food. Fgt this reason public healt authorities enact ordinances to safeguard the various steps in the production, transportation and distribution of milk from the cow to the consumer. "To produce clean milk," continues this enunent authority, "the farmer must have healthy cows, clean milkers and sanitary utensils. The dealer on his part must deliver milk promptly, pasteurized and properly i i.?a tk? ? ~u. the responsibility, for the milk, as soon as it is delivered, must he kept clean, cold and covered. It is a sad truth that very often the care of milk in the home is the weakest link in the chain of events from milking to drinking." The results of the tests made in Cherokee and Clay Counties were not made known but it is not expected that any of the cows treated showed any signs of the tuberculin baccilli.
