PINEAPPLE RECIPES
Pineapples are plentiful,

of a week or mor«. The
quality is extremely good and the
prices low. ^
■' Here are some pineapple jrecipes
that ^ou will want to try. They
are ^11 easy to prepare and will
do wonders to spruce up «n in
teresting meal. •
Pineapple and Cresb Salad
One pac'kage lemon flavored
'gelatine, mayonnaise, on^ cup
chopped watercress, one cup
shredded pineapple, one half cup
chopped maraschino cherries.
'Dissolve the gelatine in a cu|>
of hot water. Cool and allow to
set until thick. Divide this mix
ture into thirds. To one third of
it add the shredded pineapple and
pour into the freezing tray of the
refngerator. To the second third
add the chopped cherries and pour
over the pineapple mixture. To
the last .third add chopped water
cress and pour over cherries. Place
in refrigeiator to become firm.
When ready to serve, cut in slices
and seive on crisp leaves of let
tuce with mayonnaise.
Pineapple Meat Loaf
One pound ground beef, one
pound groupd pork, three fourths
cup 1 rushed pineapple, six slicies
bacon, cut in half, one cup ^aham
bread crackers, one chopped pi
mento, one egg slightly? beaten,
salt and pepper.
, Cosine the ingredients in the
order given. , Line a loaf pan with
bacon and pack In’the, meat mix
ture. Place slices of bacon across
the top a«d bake in a moderate
oven over 350 degrees t*. for one
and a half hours.
Pineapple Squares
Three Cups packaged pr5pSre3"
biscuit mixture, one half cup gran
ulated sugar, one egg, beaten
three fourths cup bottled milk or
six tablespoons evaporated milk
and six tablespoons water. One
and •one half cups- crushed pineap
ple, one third cup chopped shelled
almonds.-^ ..
Combine the biscuit mixture
with three tablespoons of the sug
ar, then add the egg and milk
mixed together, and the cruslied
pineapple. Beat all well and turn
into a well-greased shallow bak
ing pan about eighty by twelve
inches. Sprinkle the remaining
five tablespoons sugar over the
batter, then top with the chopped
almonds (do not blanc them). Bake
in a hot oven of 425 degrees F.
about thirty minutes. Serve hot,
cut in squares. Makes twelve two
inch squares.
