Fleered To Head USAF Otthm' 17ves Club Mrs. Sadie Thompson Brown was recently elected president of the CanadianUSAF officers' Wives Club in St. Margarets, New Brunswick. Mrs. Brown's accomplishments, as the wife of Air Force Captain Herbert D. Brown, are indeed outstanding. Less than four years ago, she was president of I ; MRS. SADIE BROWN the Officers' Wives Club in Wasserkuppe, Germany. She has been involved in numberous Base activities since her husband's first year of service. Currently, she is president of the local "TOPS" Club. As an Air Force wife and mother of three children, Mrs. Brown has had the opportunity to live and travel in several foreign countries including Italy, Spain, Switzerland, France, Austria, Germany and Denmark. Now residing in Canada, she considers herself a typically involved housewife. The Brown's are one of five USAF families residing at this Canadian Air Station. Mrs. Brown is a graduate of Merrick-Moore High School In Durham, class of '64. She is the daughter of Mr. and Mrs. Frank Thompson of Center Street in Durham The Browns will be returning to the States in the spring of 1975 and plan to set up houskeeping at McDill AFB in Tampa, Florida. Mr. and Mrs. C.C. Smith, Jr., Umstead Street, celebrated their 50th Wedding Anniversary on January 4, 1975. Their sons, Carter III and Albert honored their parents on this Golden Anniversary occasion with presents, flowers and a dinner at the local Holiday Inn. The Smiths presented a monetary gift to Rev. P.R. Cousin as a donation to the Building Fund of the new and modern St. Joseph's A.M.E. Church. Mr. Smith a native of Poplar Bluff, Missouri and Mrs. Smith, the former Miss Celeste James of Lawrenceville, Virginia met during their college days at Wilberforce University. He is a retired District Manager of the North Carolina Mutual Life Insurance Company. Mrs. Smith was also employed for many years by the Company. Both are active in civic and community activities. Carter III is a Principal Engineer with the Electronic' Division of General Dynamics in in San Diego f California and Albert is an Assistarrt WiHicpal1' of the Mary Hunter Intermediate School in Bassettt, Virginia. Over 40 of the expected 80 participants were present for the initial meeting of Jabberwock Contest. The Initial Queens party was' co-chaired by Mrs. Marsha G. Kee and Miss Ann McMillian. DO SOMETHING ABOU ' ?RGY CONSERVATION ; Energy conservation is one of the obvious focal points of tbo present and future and is also priority of the Extension Service, the education arm of the United States Department of Agriculture. According to recent information, studies have shown that commonplace habits in preparing food can be costly, not only in terms of wasted money but wasted energy. Food preparation usually involves the use, of several heat producing appliances and appliances which' product heat require more energy generally, than motor driver or motion appliances. The wise use of these appliances can save a great deal of energy. Energy saving starts with the way you use the range. To conserve energy, start most foods at a higher temperature, then reduce the heat to maintain the desired cooking temperature. Did you know that every time you open the door to the oven . the temperature drops from 25-50 degrees? That's why you have the "peek a boo" window on modern ranges so you dont have to waste that energy! You can learn to be a good "oven manager" by using the oven for a whole meal..not just one potato". Using your oven to capacity is a good habit to form If you're only preparing one time, effort, as well as fuel energy. The kind of utensils you use can make a difference in energy conservation. When cooking use only utensils that fit the range burners or surface units. Remember, pans with flat bottoms will absorb more heat. Be sure to use tight fitting lids and place the utensil on the range before turning on the heat. To conserve oven heat, use more glass or glass ceramic baking dishes (when possible), because they transfer heat more efficiently than metal. If you use glass or ceramic dishes, you can lower oven heat by 25 degrees (if you're using a recipe that calls for 375 degrees, you can usually use 350 degree.) If you have an electric range, cut your time by five minutes, turn off and let the reserved oven heat continue to bake your food. Using casseroles and dishes that require just one range top burner are useful fuel saving shortcuts. You might want to try one of the following fuel saving casseroles that can be prepared on the top of your stove. TOP-OF-STOVE CASSEROLE 1 small onion 1 pound ground beef 2 cups canned tomatoes 12 cup uncooked rice 12 cup water 1 tablespoon sugar 2 12 cups cooked split peas Salt and pepper, as you like Chop onion. Put ground beef and onion in pan. Cook until meat is browned. Drain off fat. Add tomatoes, rice, water, and sugar, Cover and boil gently about 25 minutes until rice is tender. Add split peas, salt and pepper. Heat slowly until hot. LUNCHEON MEAT SPANISH RIC12 cup uncooked rice i. iifis.-, 1 tablespoon fat or oil 1 small onion 12 green pepper 1 stalk celery 2 12 cups canned tomatoes 2 12 cups cut-up canned luncheon meat Cook rice in fat or oil until lightly browned. Chop onion, green peper, and celery. Add to rice. Stir in tomatoes. Heat to boiling. Lower heat. Cover and cook about 25 minutes untfl rice is tender.
