Calavo Growers of Califor nia invites you to rid your self of this hackneyed cake -.concept with "Paradise ' Mango Cake." ' Complete with an extra-moist texture, , the crunch of walnuts; a spark of cinnamon, essence ' of orange, and last but cer tainly not least, juicy man , go, this cake has all the credentials to be a con. tender. ' - According to the folks at Calavo, r when choosing a mango for. this recipe, do not judge ripeness by out side color. They say mangos are ready to eat when they 1 yield to gentle pressure gos may be green, yellow, or tinged with red or yellow.) One characteristic is al ways constant: the mango's juicy interior it golden with a long flat seed , In the 7 center. The best way .to prepare a mango for this sumptuous recipe it to first ' score its skin lengthwise. . Then, simply peel the skin : back as you would a bana na. Next, cut away - the ' mango flesh from the long seed with a sharp" knife. That's all there is to it. . The mango's bright yellow flesh Is loaded with more , than .. the . recommended daily allowance for vitamin A. Also, mangos contain nearly thrde-quarten of the RDA for vitamin C and amounts of thiamine, ribo flavin, calcium, phosphorus and iron. Half a medium sized mango has only about - 66 calories. .
