Roxboro St., Durham or call 682-2133. FOR SCHOOL STARTERS Beginning school is a frightening experience for many young children. They leave a secure, known environment for one that is unknown. Starting Monday, August 18 at 5 p.m., on Channel 4, a special week of "Mister Rogers' Neighborhood" will be devoted to preparing pre-schoolers for their first day of school. Emmy Award-winning host Fred Rogers will go on location to a real school to acquaint pre schoolers with a typical day. Rogers explores con cerns they have about school: what teachers and classmates will be like, how much they will have to know before they get to school and who will take care of them there. "Young children frequently have misconceptions about what school really is," Rogers says. In the special week of programming, questions will be answered and reassurances given. You also need to be organized when the job is at hand, say agricultural exten sion foods and nutrition spe cialists at North Carolina State University. First off, there has to be enough space cleared in the kitchen. Use the counter to good advantage by lining up all the equipment and plan ning the most efficient use of the space, she says. Then have everything ready to use. For example, get all the jars washed and scalded before you need the sink for cleaning the food. If you'll need hot water for blanching or scalding, have it ready on the range while you clean and trim the produce. If you will need extra ice for quick cooling, freeze it' beforehand. Then have any containers, packaging ma terials and labels you need at the space where you'll use them. Everyone in the family can help, provided appropriate jobs are assigned and the kitchen is big enough. Younger children can help wash or rough-trim vegetables and have fun making labels for the finished products. Just make sure they're not in the traffic pattern when you're handling hot water or jars. Programs at Y.E. Smith, East End and Oeorge Watts Elementary schools, these programs are scheduled to start on August 19 and operate each day school is open through June 5, 1981. The hours are Monday through Friday from 2:30-5:30 p.m. The program will offer a wide range of activities which will include sports and athletics, music and drama, arts and crafts, study hours, tutorial ses sions, and other seasonal special events.
