I used to say, just as casual as you please. Little did I know that farm scien tists wore poring over their smoking test tubes, and white rats, trying to discover WHY ham and eggs have teamed up on so many menus. ■Why don't I order, well—say ham and iloed cauliflower? Or eggs and hashed brown Creole shrimp? What does "ham and eggs" have? besides a ring to warm the heart of a man wiio hasn’t had a bite to eat since the night before! These scientists of ike Bureau of Animal Industry, a U. S'. Department of Agriculture branch, tused every avenue of research to get to the bot tom of the thing, I feel sure. They passed along their discoveries to the State College E-xtenslon Service, where I was able to take a quick peek into the best ham and egg know-how. Young white vats, which digest their food In much the same way as you and I, were pressed Into service. They dined on dry-cured ham and spray-dried eggs: two parts ham and one part egg: and equal parts of my Javorite breakfast piece. The results were not lensatlonal, perhaps—“but significant, to say the least. Although the protein m dry-cured ham was inferior to that of spray- dried eggs In promoting growth, when the diet contained equal parts of ham and egg protein, t be growth- promoting value was practically the same as tor eggs alone. But when the rats’ lunch contain ed two parts of ham and cuie part of egg, the growth-promoting value was .somewhat higher than the computed value, but lower than the value for eggs alone. The report said that tliase results "Indicate a moderate supplemental relationship" between the two foods. Which moans that the protein of the egg heightens the value of the pro tein in the ham. When oaten together, tiese foods supply more nourishment than when they are eatt n separately, Thai’s the gist of it. Now that this thing has been thrashed out by the scientists, their test tubes, and their white rats, it is comforting to know that your prac tical experience and mine has been confirmed. The next time we go tc work with the old knife and fork on our most delectable breakfast pastDme, we’ll bask in the knowledge that good old ham-n-oggs is not only tasty, savory, toothsome, and extremely delicious, but also—according to our farm scientists—"an efficient snd satis fying combination." Department of Agriculture, in co-operation with a number of experiment stations has found that iTo to 35 per cent of all plggs farrowed die before they are two months old, according to Jack Kelley, Animal' Husbandry specialist for the State College Extension Service. Over half this loss is due to factors centered ^'around improper housing. Fifteen per cent are over laid, 6.2 -per cent are born dead, 3 per cent are chilled, 2,2 per cent are born weak, and 1.5 per cent are starved. Answer: Protection of food is of number one importance in prevent ing or controlling such Insects as the Mediterranean flour moth, flour beetles, 'the saw-toothed grain beetle, granary and rice weevils, and the Indian meal moth, says James T, Conner, Jr., entomologist for the State College Extension Service. He recommends that all cereals, crumbs, nut meats, and other food fragments should bo shrubbed from the cup board and pantry with a stiff .brush aild soapy water at frequent inter vals. All food products, such as cer eal and flour, should be stored in tight containers, if they are to be hold for a period of time. If food is to come in direct contact with sprayed surfaces, wait several days then Ihoioughly scrub -surface with soapy water before replacing food pro ducts, agents, 129 farmers purchased pure bred bulla and 679 secured purebred or high grade cows and heifers to auild dairy herds in 3&7 communi ties in 37 counties. To produce cheaper pork and to maintain a better hog quality, 161 families purchased purebred boars, and 300 obtained purbred or high grade females. In poultry, 2,638 families secured a hotter strain of chicks for home production of egge and poultry, and in one county alone, more than 16,- 000 baby chicks were purchased by Negro farm families. A total of 16,835 farm women were active mebers of home demon stration clubs in 43 counties. They canned fruits, vegetables and meats for their families in the amount of 1,830,328 quarts of fruit, 2,0’63,311 cans of vegetables, and 315,017 quarts of meats aud fish. "Although the job of our Exten sion agents is a full-time one,” Jones'^ said, "the S9 men and women found time to cooperate with other agen- ci.s in getting much-needed informa tion and action with Negro farm families on programs of public in terest." C. Merit System Office. All applications received after that date will be placed in a future file, to be con sidered at the time of the next cleri cal examinations. These examina tions will be held at 12 examination centers throughout the State for the following positions: I Principal, senior and junior gen eral clerk, senior and Junior stenog rapher clerk, typist clerk, senior ste nographer-reporter, senior and Jun ior stenotyplst, senior and Junior addressograph' operator, senior and junior graphotype operator, senior and junior bookkeeing machine op erator, senior' and Junior calculating machine operator, senior and Junior key punch operator, senior and Jun ior tabulating machine operator. Registers established as a result of these examinations will bo u.sed to fill existing vacancies throughout the State with the State and county rai Harnett Preschool Clinics Begin Monday, March 24 The Harnett County Health Department; will conduct annual clinics for examination of preschool children between Monday, March 24, and Thursday, April 17. Clinics will be held in each school in Harnett County. A schedule of the time and place of these clinics is given below. Any parents having children who are exp ected to attend school next fall for the first time, should make arrangements to have them present at one of these clinics.
