When One takes into consid eration the multitude of minor products that find their way to markets in hermetically sealed packages, the result is simply marreleus. It is estimated that 350 varie ties of fruits, vegetables, fish anl meats are packed during their seasons. There is almost no limit to the possibilities of canned food if it is rightly pack ed and placed before the people. We are so accustomed to hav ing this easily digested, health ful food, that we look upon it as a matter of course, and often forget what a privelege we en joy - In no part of the country has this industry brighter pros poets than in the South. At the present time the question is agitating tha public mind, es- veciallr the investor, wno oy his sharp insight of the business world, can see a greater mar gin on each can of fruit or veg etable packed in the South, over the same kind and class of roods made ready for the mark' et in the North. Now to bring the" subject home to your own cities and counties, have you sufficient fruit and vegetables to supply factories of this kind of which I speak? Certainly! Why it has been said and is known to be a fact, with an average crop, the fruit that f alls from the trees, and the vegetables that is allowed to de cay, withm the limits ot num bers of your counties, would if sold more than pay the taxes of those counties. Think of this enormous waste then picture to yourself the extra amount of money that would be saved to farmers, if there were canning factories in operation that would consume the surplus fruit that grows to abundance in your section. What has been trees of former years is liable to keep on in the same way for the next half century, unless the kand of man comes to the rescue. An investment of this kind pays larger profits on the capital, besides being of much benefit to the city or county where the factory is located. Many have been under the impression that the necessary machinery for conducting this industry is ex pensive, but such is far from the fact. The capital required is easily within reach of almost every farmer in the South, and can be carried on is connection with his work. The manufac turers of the machinery furnish instructions for putting up the outfit and also furnish all the processes of the various fruits and vegetables, so that you can successfully operate your own canning without the aid of skill ea labor. To operate a factory with capacity of 2000 311 cans per day will require 12 hands, viz 7 to prepare the material for the cans, 2 for filling the cans, one capper and tipper, one fire man, and one processor.
