SYNTHETIC EGGS
Washington, Aug. 7. ? The Com
merce Department reported today
that Germany had developed egg
substitutes from tlsh and milk in
an effort to curtail its egg imports
which -amounted to $38,000,000
in 1938.
Germany also is experimenting |
in cold storage of eggs by the use ;
of carbon dioxide gas, the depart- (
ment said. Eggs stored by t'lie me- i
thod over a long period were re- 1
ported equal to fresh eggs.
From fish meat a protein sub
stance has been extracted which
can be used Instead of egg whites
in baking, candy, mayonnaise, ice
cream and other products. Anoth
er egg substitute called milei, al
ready produced commercially is a
dried milk albunian which can be
beaten into a firm, snowy foam
that looks like beaten egg whites.
