J t the press, tubs, barrels, and hogsneads be well cleansed and freed from acids. ! ? t the straw be bright having no rust i;? r mould, and the little water that may la used soft and clear. After the apples are converted ii.to line pumice, it should be suffered to i^ main until it undergoes the proper ft r mentation. The time that this will re quire is from twenty to seventy-tv r? hours, depending on the state of tl.a weather. The greater the warmth tl.e quicker will be lite fermentation. The colour ot the pumice before it is put <>;i the press should be similar U> that of a ripe cherry. In order that the farmrt may be cniir vinced that the pumice should remain some time before it is pressed, let hint mash a few apple* and force out the juice immediately, lie will see that it is near ly as colourless as water. Let him agam mash a ft"'.' quite fine, and let them in tint state be exposed to the air for twen ty four hours, and pressing out the juice* he will find it a rich cider colour. If the experiment is carried further by putting the juices into bottles, and permitting them to undergo the usual fermentation, he uill be still more convinced of the im propriety of pressing out the juice imme diately after :he apples are ground. Many fanners in the United Slates get from lour to ten dolla-s per barrel; but the majority do not get txy . dollars. The latter should buy one ? r two barrels of their neighbors, and keep it to treat their friends. They should continue this prac tice until they are able to make such a? will bring at least three dollars per bar rel. NKW ENGLAND FARMERS. The idea is, that these people labor severely. This is a great mistake. They have much, because th*?y waste no time. With them, there is " a place for every thing, and every thing in it? place." Their horses and cattle, tool? and implements, are attended to with clock like regularity ? nothing is put off till to morrow which can be done today. Kco* nomy is wealth, and system affords ease. These men are seldom in a hurry, ex cept in harvest time. And in long winter evenings or severe weather, which for bids employment out of doors, one makes corn brooms; another shoes, a third is a carpenter, cooper, or tailor; and one wo man spins; another weaves; a third plaits " leghorn bonnets;" and a fourth makes lace. Little children, and the aged and infirm, knit stockings. And the families thus occupied are among the most heal thy and cheerful in the world. It is easy with them to reduce their wishes to their means, if incoim nient or imprudent to extend their means to their wishes. These are the "sort of people" who fought at Concord and at Hunker's Hill* llenuington and Saratoga.
