Watered stock, watered milk, and
watered coffee the United States Gov
eminent is carrying on a crusade to
eliminate all three.
Everyone knows about watered
stock. Everyone has seen "blue milk "
the combined efforts of a cow and the
old pump. But not everyone is on his
guard against "watered coffee."
That the United States Government
realizes the danger of watered coffee
is shown by the specifications for the
United States Army supplies. These
specifications say plainly:
"Coffee : roasts must be 'dry'
roasts, no water being: permitted
before, during or after the process
of roasting."
Water in coffee is a piece of dishon
esty practiced by unscrupulous coffee
roasters. They turn the hose on the
coffee while it is being roasted, so
that It won't lose weight, as coffee
will, when properly roasted. In . roast
ing, coffee should lose about 16 of
its weight. If it is watered it loses
but. 4. The difference, of course, is
water, for which you pay coffee value.
This is adulteration and nothing
more. The water-logged coffee is rank
and unhealthyr Of course, it is not
honest to charge for coffee, and sell
coffee beans soaked in water.
A lot of watered coffee is being sold
no doubt right in this town. It is more
often met with in the lower priced
grades of bulk coffee.
As coffee is such an important bev
erage, pure food authorities are ad
vising housewives to use the greatest
care in selecting their coffee. The pure
food experts say that the best way to
avoid watered coffee is to buy some
reliable packaged brand, roasted by a
reputable coffee roaster as Arbuckle
Brothers of New York. Adv.

CARING FOR CREAM ON FARM
Expert of University of Illinois Gives
Ten Excellent Rules for Farmer
to Follow.
(By H. A. RUEHE, Associate in Dairy
Manufacturers, University of Illinois.)
1. Keep the cows clean.
2. Use covered milk pails.
3. Milk with dry hands.
4. Remove milk from the barn im
mediately and separate it at once.
5. Set the separator so that it will
skim cream that will test from 35 to
40 per cent in the winter and from
40 to 45 per cent In the summer.
6. Wash, scald, and dry the separa
tor and all utensils immediately after
using. The separator bowl may be
dried in a warm oven, though the
oven should not be so warm that it
will melt the- tin on the bowl parts.
Setting utensils in the sun is a good
practice, as the sunshine acts as a
germicide.
7. Keep all utensils and separator
parts dry when not in use.
8. Cool the cream immediately after
skimming by setting the can in cold
running water. Construct a 'cooling

Properly-Constructed Tank.
1. Inlet, usually 1-Inch pipe. 2. Wood
en trough, conducting water to within 3
inches of bottom. 3. Sticks, holding can
in place as shown by cut. 4. Shows posi
tion of half filled can; run stick through
handle in cover to prevent it from sliding
out from under the stick. 5. Shows posi
tion of can when filled. 6. Shows position
of wire which prevents the cans from
tipping. 7. Outlet, usually 2-inch threaded
nipple.
tank so that the cream will be cooled
with the water that Is used to fill the
stock tank.
9. Never mix warm cream with cold
cream. Cool the cream before mixing
it with previous skimmings.
10. Do not allow the cream to freeze
in cold weather.
11. Stir the cream at least twice a
day ; this will keep it smooth and free
from lumps. Do not use a wooden
'paddle for a stirrer, as it is unsanitary.
12. Deliver cream frequently, at
least twice a week in winter and three
times a week in warm weather.
PLANT ROUGHAGES FOR COWS
Every Farmer Is Advised to Grow
Abundance of Alfalfa or Clover
Concentrates High.
. Grow an abundance of feed for the
cow this season, advises A. S. Neale,
specialist in dairy husbandry, division
of extension, Kansas State Agricultural
college.
"Already the price of concentrates
is 'out of sight.' Prices will continue
high unless these concentrates are re
placed by the cheaper roughages," said
Mr. Neale. "Every farmer should plan
to grow plenty 5f alfalfa or clover, and
silage. If alfalfa or clover cannot be
grown in your section substitute an
other leguminous crop, such as cow
peas. "During the next 12 months the pro-,
duction of dairy products will be due
largely to the feeding of roughages in
stead of concentrates, as has formerly
been the case.
"Dairy cows of quality receiving
nothing but roughage can produce 200
to 250 pounds of butterfat annually,
provided the roughage is fed in abund
ance and is composed of a combination
of silage and a leguminous hay. Of
course poor cows will not do so well
on this ration."
ROUGHNESS FOR DAIRY COW
Animal Is Not Content Unless Stomach
Is Full Feed Grain According to
Milk Yield.
Roughness is the first important con
sideration. A cow is not contented
unless her stomach is full. She should
always have all the roughness that
she will clean up and then the amount
of grain she receives should be regu
lated by the amount of milk pro
duced. A dry cow in good condition should
be fed roughness only, and does not
need any grain. In feeding grain to
milk producing cows, the following rule
may be used, and is found to work fair
ly well : Feed one pound of grain for
each three pounds or pints of milk pro
duced. GIVE CALF GOOD ATTENTION
Pen Must Be Kept Clean Use Plenty
of Straw Furnish Milk, Hay, Bran
and Other Feeds.
The calf pen must, be kept clean.
Use lots of nice straw, not putting it
upon a lot of fermented filth, but dig
out all manure very frequently and
add fresh straw almost daily. Calves
are so frisky that they tramp the straw
into the manure.
Separator milk, tender clover or al
falfa hay, bran, oilmeal, silage, corn,
such feeds are the stuff good calves are
made of.

EUROPE FOR CLEAN MOVIES
Foreign Countries Are Buying Much
Film From America, but Suggest
Change in Its Character.
Europe is buying more motion pic
ture film from America than ever be
fore. This is an excellent branch of
our export trade. It does not take
much raw material. It gives employ
ment to many grades of labor from
the rough to the highest grade. It dis
tributes money through all the stages
of its progress from the crude product
to the finished.
Europe finds in the "movie" a bit of
relief, of taxation from the long
strsin and horror of war. It wants
American pictures but what an indict
ment of American morals is contained
in the report of our vice consul, David
C. Kerr, stationed at Birmingham,
England, who notifies the secretary of
commerce that "the only recommenda
tion offered by renting agents as to any
improvements desired in American
films is a request for "less of the sex
ual problem !" We are so habituated
to seeing indecent plays, suggestive
"movies" and women in scant drapery
that we have lost the proper sense of
proportion morally. "Less of the sex
ual problem," says Europe. The mes
sage is a good one from a people who
are being made better, cleaner, truer
as they are tried in the fire of war.

TAMMANY IS 128 YEARS OLD
Famous Political Organization of New
York Was Founded by William
Mooney, an Upholsterer.
Tarymany is 128 years old. On May
12, 1789, William Mooney, an uphol
sterer, who previously had been active
as one of the Sons of Liberty, founded
in New York what was intended to be
a patriotic and social organization, the
secret society of St. Tammany, or Co
lumbian order, which in 1805 was regu
larly incorporated as a fraternal aid
society.
It was divided into 13 tribes, each of
which had its separate totem. The of
ficers became known as the grand sa
chem, the sachem, the sagamore, or
master of ceremonies, and the wTis
kinski, or doorkeeper.
In 1811 the society built its first hall,
and in 1867 moved to Tammany hall,
in Fourteenth street, where it has been
ever since. Early in its history Tam
many began to take an active part in
politics. Aaron Burr is supposed to
have been its tutor in the ways of poli
tics, and in 1800 the soctety took part
in its first campaign, being instumen
tal in carrying New York for Thomas
Jefferson.
The name Tammany is adapted from
that of an Indian chief, Tamanend, of
the Delaware tribe, who was famous
for his virtue and wisdom. He died in
1740 and was buried in New Britain
township, Bucks county, Pennsylvania.
Tammany was one of the earliest so
cial organizations in America. The
members in the early days were accus
tomed t dress in Indian costume.

Telegraphing With the Voice.
A telegraph "sender" has been ex
perimentally perfected which the op
erator works with his voice instead of
his fingers. In place' of raising and
depressing his sending key he sends
his dots and dashes by modulating his
voice to produce long and short inter
vals. The principle of the sender is
the same as that of the ordinary type.
In the usual senders the raising and
depressing of the key opens and closes
the circuit to produce the dot and
dash. In the new type a delicate
diaphragm is so arranged that the vi
brations in the air set up by the voice
open and close the circuit as in a tele
phone and produce the same results.

It is true that in those three hours
they had had one blowout and once
they had to get a team of horses to
pull them out of the mud. But even
so, it seemed as if they could not be
more than a half mile away. Finally;
they met a man on horseback.
"How far to Nashville? Three miles,
