Moreover, she is an American chef, holding her own and building a fine reputation among the army cf foreign male chefs em ployed in the other hotels and clubs. She is Miss Charlotte E. Field, chef and food manager of the Hotel Lex ington. one of the hotels under Ralph Hitz direction. It is affiliated with the famed Rook-Cadiliac in Detroit, the Van Cleve in Dayton and the New Yorker in New York. The experiment of having an Amer ican Woman cook for a thousand American men and women each day was undertaken two years ago. Not only is a woman in charge of the kit chens. hut her entire staff of cooks is composed of women. The two-year ex periment has proved highly successful, according to Manager Charles E. Rochester. “Women seem to have a large amount ot natural ability in the kit chen.” he said. ‘‘There seemed to be no reason why they should be out of place where more than a thousand meals a day are prepared. Miss Field has shown an appreciation of economy in handling food and an understanding of the value of variety. Her skill as a chef is attested daily by crowded aininpi rooms and grill.” Miss Field was born in Pittsfield Mass., and acquired her taste for hote food management from an aunt win won local fame in a country hote kitchen. Miss Field attended Pratt In stitute and Columbia University. She was called to the Lexington after sht had attracted attention as a chef in a prominent' New York restaurant. Because recent nutritional research has revealed that canned pineapple con tains more known dietetic value than any other fruit. Miss Field places it i; some form on each day’s menu. Here i one of the favorites among Lexington guests, her pineapple meringue pie. Line a pie tin with a good rich pas try and prick with holes to keep il tight to tin while baking. Bake a ligln brown. • Make filling as follows: 3 cups crushed pineapple, 3 tablespoons of corn starch. 1 cup of sugar, juice of one lemon. 1 tablespoon of butter. 1 egg yolk, 1 pinch of salt. Method: Bring pineapple to a boil add butter, sugar, salt, lemon juice Mix corn starch with a bit of cold water and add. Cook mixture well, and lastly add egg yolk. Remove and put in shell.
