To each pound of fruit allow a pound of loaf sugar. .Put a layer of sugar at the bot tom of .the preserving kettle and . then a layer of fruit, and so, on until the fruit is all in. Stand it over 4iot ashes until the sugara is en tirely dissolved , 'then boll them till they are clear ; take them put piece .by piece arid spread them sn a dish free frpm syrup. Boil the syr up in the pan until it jellies ; when the peaches are cold fill the jars half full with them,, and till up with, the boiling syrup. Let them stand a 6hoTt time covered with a thin cloth, t!im put on brandy paper, and cover them close with corksskin 0 paper. From 20 to 'd0 minutes will generally be sufficient to pre serve them. .
