A calculation has been made, that a pound of butter can be made per week from each cow more, by this process (ban .bv anir others i-l cpr. ' DESCRIPTION OF THE PANS; (AND -. MODE 'OF USING THEM, j Each pan is placed on a strong wooden Irame 01 tne , most convenient neicni ; is dish-shaped, either squire or oblona ; ithe largest being about fie feet six inches long by thirty inches wide : smaller pans can be made to order. They are' double the 1 pan foe the milk being firoily joined to antjtber ot tue samesnape, out eocnewnat .larger rwbich forms a casing Ground it ; thersbace between them being from two to three inch es aeep, is tor ine purpose or containing hot water thus forming a bath around the milkv Jg the centre of the "upper or njilk -pan. which dtps reffularlv towards the mid dle, is a fine strainer ; and to this attaphed short pipe,; which. descends through bt bottbin "of the casino pan, of which howev. r, it is independent it is furnished with a brass iap, its purpose being1 to let eff ihe milk contained in the upper pan, at the end 01 tne process. 1110 casing, or bottom pan, is (urnisnea with two pipes; one perfpr etes a corner of tbe upper or milk pan. and through 'tbts, boiling water is poured by means 01 a lunnei at me proper time, solas ; j 1 .. e 1 1 . t . . . Thus the pans, although firmly joined together, are independent each other, the union, however, 'streogt ening each in a remttkable manner. At the time of milking the taps are ed, and tbe upper pan is to be filled with the milje as it comes from the cows j aft standing twelve! hours, the tap is partial enclosed; and a! small portion of the milk! drawn away ; this, 00 examination, will j found 10 contain the impurities of tbe mi (which have subsided; (the peculiar forma- lion of the pan having induced the sediment Jo form exactly I on the strainer,) and tjbrie. conomy is of much consequence to tbeiqua1.- jty, of the Gutter. I - - " !.H'".; : ! . ' But perhaps, one of the greatest and most perceptible advantanes of these loans is, the owner of the dairy is no Jonger at the raer- cy ot careless and unprincipled servants, who in the 'hurry, of skimmingl are often known to sacrifice a great portion of tbe cream 10 the hog-tub, a (pss which soon a- mounts to a large consideration : here, these setvants have only to isetptbe milk pans run ning, and .they will skun heinseltes, requir ing oniy a sman ponton , 01 care 10 stop them wheh the milk has passed away : while another very great injury is prevented which arises from the opposite vice ; that of over- skimming, by which the putter 18 deteriora- ted by tbe stale milk which is and mixed with the cream, for 1 er be of the proper, size' and fi milk wilt all pass, arid the cream will all re mam. To a nice observer, however of drawing off the impurities of the bottom of the paniPeire boilins water, will not be li&htly consider ed ; a close examination lof thiai portion of the milk will convince any one, by smell, as well as taste, that nothing is so disgust- i 1 i mm mb I t a ms as animal putridly.
