Co Tomatoes, really a fruit but more often regarded and used as a vegetable, are easy to can at home, and yet few people ever have enough to last through the winter until the next crop eomee along. To can, select fresh, firm, sound ripe tomatoes and wash carefully. Scald in small quanti ties. Using a cheesecloth square to hold the tomatoes and dipping them into hot water is an easy and effective way of scalding. Skin, pack and process as quick ly as possible after scalding. Let ting the tomatoes stand after sealdiag is likely to cause flat sour. If exposed to air after skinning they also lose food value. Tomatoes are an important source of Vitamin C (ascorbic acid) which is needed in daily diet for good health. Always cut out the hard cores and green spots be fore canning and avoid canning tomatoes from whieh decayed spots and fungus growths have been removed. The Ball Blue Book recipe for Begular Pack directs that the pre pared tomatoes be packed solidly into hot jars. Add one teaspoon salt to each quart Do not add any liquid. Process 41 minntee in hot water' bath. Or, anothei method given is to boil the pre pared tomatoes five minutes, pour into hot jars, add one teaspoon salt to each quart and process 20 minutes in hot water bath. To can 'tomatoes whole, pre pare them as above, being care ful not to cut into the seed pod when removing the core. Pack into hot jars ss closely as possible without crushing. Greene Herman Crouse, of the Strat ford community, had soil samples taken on some pasture fields and fields which he plans to seed to alfalfa. Herman also plans to re arrange his fences and fields in order to save fence and make cul tivation easier. The Soil Conser vation Service is assisting Her man in getting these jobs done. Van Miller has a good stand of ladino clover, and pasture grass on his farm near Laurel Springs. Cleve Nichols, of near Sparta, has a right to be proud of his pasture and the good*grazing he is getting. A few years ago his pasture fields were galded an'tf mostly covered with shumake bushes. Now after treating with liipe and phosphate and a herd of goats you would never realize that his pasture fields were in such a condition. Four cows can be grazed now where only one grazed before. Carl Andrews, of near Pine Swamp school, seeded a field this spring to ladino clover and grass. The mixture was seeded on poor land with wild grass and broom sedge sod. Of course lime and fertilizer were applied. Carl is now getting excellent grazing, from what before would not fur nish any grazing worth while. •Robert Joines, of Laurel Springs community says, “I want you to come and lay my strip off this fall. I am afraid you'will be too busy next spring.” Robert is real ly sold on this system of farming.
