Arrange in a baking pan and put in the oven for a few minutes until | marshmallows are browned. Serve j on a small platter or chop plate. CINNAMON APPLES 6 tart apples i % c red cinnamon candies v lb c. sugar i a 1 c. water i Make a syrup of the water, r ] sugar and candies. Peel and core i apples and place in a deep pan. s Pour syrup over apples and cook until tender, basting often with the syrup. Take care that apples do not become too soft. HARVARD BEETS , * For 3 oups of cooked beets cut in cubes prepare a sauce as jJ follows: Melt 2 tablespoons of j{ butter in a sauce pan. Add 2 c ! tablespoons of flour and mix to c a smooth paste. Add 1-3 cup t sugar, '4 teaspoon salt, % cup t water and H cup vinegar. Cook, c stirring constantly, until the mixture thickens. Add the cubed beets and reheat before serving. If canned beets are used, l\ cup 1 of beet juice in place of water ' will give a deeper color to the 3 sauce. MOLDED CRANBERRY SALAD 1 2 c. cranberries % c. sugar r 1 c. water , ? 1 c. celery % c. chopped nuts s 1 T. gelatin ' '"t Y !4 c. cold water " ~rT Salt to season Cook cranberries in 1 cup water until berries are all broken, add sugar and cook about five minutes more. Soak gelatin in Vt 1 cun of cold water. Add gelatin to cranberries. When mixture begins to set add celery and nuts. Pour into molds. Chill. Serve in nests of lettuce with mayonnaise. CHRISTMAS VEGETABLE SALAD c. diced cooked beets 1?4 c. canned string beans cut in inch lengths Shredded cabbage or Lettuce _ leaves French dressing I Boil canned beans 10 minutes and then chill before serving. Let t diced beets and cut string beans ^ stand in French dressing for at j least one hour. Do not combine ^ vegetables. Arrange vegetables in separate adjoining mounds on bed \ of shredded cabbage or lettuce. Serve with French dressing. 1 AMBROSIA I 6 oranges peeled and thinly j sliced . % c. powdered sugar 1 cocoanut grated Arrange layer of orange slices in serving dish, and sprinkle with sugar and cocoanut.
