Tbc Board of Health, that most valua ble uiljutii't of the city government, held its regular meeting last evening m ts room iu the City Hall, to organize for the summer campaign nguiust unclcan niss. The numbers present were Mayor I'attou, Dr. M. H. Fletcher, Dr. II. It. Weaver, Dr. Clias. E. llilliard, Dr. Chas. S. Jordan and City Engineer Lee. AU'er- man Henrv Kedwood, who is bv virtue oi bis position as chairman of the finance committee a mcm'er of the Health Hoard, was the only one absent. Organization was the first work at tended to, and this was effected by the re-election ot Mayor I'attou aschaitman and lr. Chas S. Ionian as secretary. On motion of Ir. llilliard the city was divided into two districts, as it was dur ing Inst summer, and the salaries of the district health officers were lixcd at Soil, a month eai'h. The line between the districts remains as it was: I'lCginuiug at the city's northern limit and running with North Main to Water, thence to Church, down 'Jhnrch to South Main and with South Main to thecity'ssouth ern limit. Rives, who had been a faithful conductor on the Ashcville street raihvav for five years, and Mr. McLoud did not hesitate to vouch lor lit in . On the only ballot the vote was: Kives, o; Allison, ;i; Corpening. li. Messrs. Kives and Allison were declared the health officers ot the city, the former for the eastern district and the latter for the western. A petition protesting against the sau sage mill on I'. C. Mclntire's property, comer Central avenue and Woodtin street, was sent in, signed by more than li citizens living near, one of the signers being I". C. Mclntire. Geo. W. Mav ad dressed the Uuaril in support of the peti tion. It was decided that the Hoard should visit the place in a body this morning. There was some allusion to the refuse from the gas house being emptied into Town branch. Several members thought it better to have it that way than to have it emptied into the sewer, as in the latter ease the odor would reach every house iu the citv, and in the other the trouble would beonlv local. Baron li. d'Allinges, superintendent ol lliltmore Farm, gives some suggestions concerning the preparation of asparagus lor the table, which will be of interest to Ashevillc cooks. The Huron says: "The acre of asparagus planted three vears ago at one of the lliltmore films has yielded its thousand bunches to 'i:ue this season and the product lias been received with great kindness and appre ciation. However, 1 hear here and there complaints of the asp tragus being too tough, the old green shoots, grown overground, being preferred by many and sold to many on acconnt of their being more tender. With due respect to the culinary art of the white and black presiding ladies at the Ashevillc kitchens I cannot but sav that the toughness ol the asparagus is entirely the result ol wrongly handling this vegetable alter it has hit the garden and that the grower guarantees it to be tender down to the root cud when handled and cooked properly. The following remarks will help to do so : "1. Never buy more asparagus at a time than you will ue the day of buying. It is thcadvaiuage of the liome market that it oilers fresh vegetables. "li. If for some reason vou should be obliged to buy a larger supply, keep it in wet sand. It becomes dry and tough when kept in the open air of pantry or cellar, and tasteless and flabby if kept m water. ";!. Scrape the asparagus before cook ing. Take the shoot in your lelt hand, holding the bud end gently between the thumb and two first fingers, the root end resting on the lower part of the palm; then with a sharp knife beginning iu inches from the bud, scrape slightly down and remove the outer tough skin, turning the asparagus with thumb and second finger as you proceed. Vou will feel distinctly the resistance of the skin, which will guide you in kccpir.g out ot the soft meat. "i. Tut theasparagus in boiling water for cooking. This causes all the pores to be shut instantly nnd no oil or H tvor is lost hv oozing ns is the case when brought on the stove in cold or warm water. "5. Don't remove your asparagus from the water (which, however, must not be kept boiling) until just before serving. It will dry up rnpidlv and us sumc an unsightly yellowish color." THK WHEAT REVIVAL.
