Sprin kle both sides cf flank steak with salt and sage. Soread apple mixture over one side of steak and roll up, tving with string or fastening with skewers. Brown meat in a small amount of drip pings. Add hot wrter and vine gar, cover, and cook very slowly for about 1 '■> hours. After 45 minutes, turn meat roll over, ^dd rinsed prunes and finish cooking. Then remove me^t and prunes to a hot serving platter. Mix flour to a thin paste with a little cold water and blend with liquid in the pan. Cook and stir until smooth and thickened. Pour over flank steak roll and serve at once, cutting meat into slices. This makes about 4 servings.
