So families completing self-help housing in the Robbinsville area, Graham County, will go *P school to learn how to take tare of their new houses—be fore they move in. “Classes will emphasize home management,” reports Sandra Roberts, home economics exten sion agent, "and will include care of floors and fiberglas fix tures, use and care of applian ces, how to operate thermostats and furnaces for best use of heat, and how to budget for housing expenses.” After families move into their new houses. Extension agents will continue to visit them to answer questions and provide additional informa tion, the agent says. Self - help housing in Gra ham County is a cooperative venture between the families, the Qualla Housing Authority and IBEC, contractor for the houses. Learn Skills Even women who work full time outside the home would do well to learn a few basic homemaking skills, including sewing and drapery making, be lieves Mrs. Evelyn Anderson, Mebane, Rt. 3. Mrs. Anderson and other family members recently spent their “spare time” remodeling an old house. The family saved money by making the curtains and drap eries and by doing their own wallpapering, points out Mrs. Bonnie Davis, home economics extension agent. Mrs. Anderson finds sewing a relaxing, yet moneysaving, hob by after she finishes her 8 hour away from home job. Crocheted Necklace If you want a necklace to match your new dress, crochet your own, advises Mrs. Wingate Morris, Angier, Rt. 1. The Johnston County home maker first strings the beads, then crochets them into a rope type necklace, according to Mrs. Patricia Brown, assistant home economics extension agent. Mrs. Morris says the crochet ed necklace idea originated in Florida but she learned the technique from a friend. Served with a tossed salad, it makes an inexpensive but highly nutritious luncheon or supper dish to serve six. In this day of rising food costs it’s not easy for a home maker to feed her family wisely but well and remain within a specific dollar allotment. But it’s not impossible. The bulk of the food budget is spent on main course dishes. Yet, by concentrating on economical protein staples such as cheese, eggs, milk, enriched cereals, dried beans, commeal and fish, in preference to meat, the dollar can be stretched to go sur prisingly far. Com meal is one of the great food products of the world and has, many times, kept nations from starvation. It is rich in B vitamins, niacin and iron. Salmon is another of the world’s most nutritious foods. Its protein is complete, the same as found in eggs, meat and poultry, and it contains loads of calcium and the all important vitamins A and D. By com bining these two products in a delectable dish you provide your family with adequate protein, vitamins and Tnin»n.i. jp a dish which everyone will agree “tastes like more.” You’ll want to include it at least once a week in your menus. Beat egg whites until stiff, but not dry, and fold into com meal mixture along with the salmon and salmon liquid. Pour into prepared dish and bake in a preheated 376° F. oven for 35 minutes, or until well puffed and brown on top. Serves 6.
