Stuffed Crown Roast Of Pork
Have butcher make a crown, the king of pork roasts. Season
$vith salt and pepper. Place in roasting pan, bone ends up;
Wrap bone ends in foil to prevent excess browning. Roast,
Uncovered, in 325 degree oven, allowing 30 to 35 minutes per
pound. Allow 1 to 2 chops per serving. An hour before roast
is done fill center of crown with stuffing.
Mince Meat Stuffing
Prepare 1 (7-ounce) package herb-seasoned cube stuffing
according to package directions. Add 1 (1 pound, 2 ounces)
jar mince meat to prepared stuffing mixture. Toss lightly.
