The allowance of time for cooking the rice should "be forty-live minutes twenty minutes for It to come to tho boiling point and twenty-five minutes for steaming. How to. Cook Trip. Tripe prepared in this fashion is served at a well known New York club as one of the most popular dishes: The tripe, about half a pound for a dozen oysters, is well washed, sim mered for three-quarters of an hour in slightly salted water, and then re moved. Jo the broth add a ta4ilespoon ful of butter rolled in flour, salt and pepper, with more flour added to thick en if necessary. Return the tripe, add the dozen of oysters, simmer and serve. This may also be prepared in a chafing dish.
