Cow-; soup peas or southern field peas, which de-1 A delicious combination dish, call spite their name, are really a kind of ec "Hopping John," may be made as bean, are, like other beans, compar able with meat in the kind of nour ishment contained in them, and can, in the opinion of specialists of the United States department of agricul ture, well be used more extensively as human food. They are com monly used in the south, where they are extensively grown, but are piac tically unknown in the- north and northeast, where other, often more expensive, beans are consumed in large quantitiTO. ' There are many varieties of cow peas, of which the white and black eye sorts are considered particularly desirable for table. In palatability, di gestibility and nutritive value they compare favorably with other beans, while their delicate and pleasing fla vor lead many. to consider them equ al, if not superior, to the latter. Cowpeas are used on the table in three forms in the pod, shelled green, and shelled dry correspondingly, re- follows: iBoil 1 quart of cowpeas and a scant pint of rice separately and mix together when done. The rice should be seasoned after it is cooked Bacon or a beef bone boiled with the cowpeas adds a desirable fla vor to the dish. BOT SCHAFER'S PALM BEACH GIRLS AT HUB Bot Schafer's "Palm Beach Girls" opened a three night's engagement at the Hub theatre last night to a fair sized audience. This is one of the best shows that has ever been here and deserves a good patronage. The singing and dancing was good. "The Piedmont Harmony Four" singing the "Rosary" was excellent. This com pany will only be here two more nights, tonight and tomorrow night. If you like a good show don't miss seeing this one. te ' RBDUSO 'Mim wMlilnM Bck and Front-Lace rS"ll!
