VIRGINIA BEACH-Carlos Montoya, flamenco guitarist of world reknown, will join Russell Stanger conducting the Norfolk Symphony Orchestra for the Friends of Music Arts Festival opening Saturday at 8:30 p,m. in the Virginia Beach Civic Center. Montoya is one of the most widely heard performers on the concert stage today. He is the most recorded flamenco artist in history and has become the living symbol of flamenco music the world over. The festival, to be held August 3 through 17, shows an exciting line-up of 20 musical and theat rical events, including such greats as Montoya, William War- field, Veronica Tyler and Gary Graffman with the Norfolk sym phony Orchestra, plus perfor mances by Odetta, the Virginia Beach Civic Chorus, the Feld man Chamber Music Society, Ba roque Music by the Recorder Society and the Recorder Consort of Colonial Williamsburg, bands from the Armed Forces School of Music, and the Pussycat Puppet Theater for Children. Four Ways To Preserve Fresh Peach Taste RALEIGH - Mother nature has been kind to our peach crop this year, notes lola Pritchard, ex tension food conservation spe cialist, North Carolina State Uni versity. There is a good crop of luscious fruit. There is no method of conserv ing peaches that will quite cap ture all the fresh fruit flavor, the specialist agrees. “But,” she adds, “since peaches aren’t available fresh year round, each North Carolina homemaker will want to use a conservation meth od that wlilbestmeetherfamily’s needs and the facilities and equip ment she has,” Besides freezing, there are other excellent methods of pre serving peaches while they are In abundant supply and the price Is attractive, the specialist notes. As with any fruit or vegetable and any method of conserving, it is important to begin with a recommended variety that has been harvested at its peak in maturity and flavor. Canned peach slices or halves are wonderful to have in the win ter for delicious desserts and salads, Miss Pritchard observes. Since peaches are an acid food, they are safely canned by the boil ing water bath method. Your coun ty extension home economics agent can give you the recom mended procedure for this food conservation method. Another real treat any season of the year is home pickled or spiced peaches. They may be canned whole, using the firmer, less mature peaches that we us ually feel do not freeze or can quite so well as fully ripe ones. An extension publication, “Pic kles and Relishes,” offers direc tions for making peach and other pickles. You may substitute the spices your family likes best for those spices suggested in the rec ipes.
