K On July the 18th, 19, and 20th, the Clnb ' Encampnicnt will be held at Cherokee for the boys and j^irls from Swain and Jackson fiowities. Club Encampments are held in practical ly all organized counties in North Carolina, as a recreational feature to dub work. J In addition to the recreational : ! ride of our program, special courses | will be given to the girls in clotliin}*, canning, and jelly making. This pro gram is the one which is being given at the Girl's Short Course in Raleigh this week. Mrs. Estelle T. Smith of Goldsboro wil asist me in putting f on this program. Strawberry Preserves 2 lbs. berries- l'/fc lbs. sugar. 1 1 cap berry juice. . , ? Pick ver the fruit and put to gether all firm, perfect berries, slight ly heat, erash and strain enough to j make a eap of juice. Make a sirup | of sugar and juice, bring to the boil ing point, remove from the fire, and cool before adding the berries. Add the berries a few at a time. Place again over the fire and heat slowly to foiling. Cook until berries arc bright | ?ed transparent. Cool and pack cold in jars which have been previously ? feri&cd. Place the jars in a kettle with a rack or a towel in the bot tom. Fill kettle three-fourths full of; water and process pint jars at sim mering tempeture V2 holr. Other ^berries may be preserved in the same way. 'This method of preserving is much j "better than soaking the berries and sugar over night. When the sugar is J added to the berries several hours j "before the preserves are to be made, j the process of osmosis takes place, I or the drawing out of t?e joics of I the berries. After the sugar extracts the juicfe, the berries wil be dark and tough after they are preserved. In addition to making an inferior pro duct you have a very small quantity in comparison to the amount -pro duced under scientific methods of preserving. n NOTICE Upon a petition signed by more than one-third of the qualified votens of Dist. It is further ordered that said election shall be held at the school house or grounds of said district on the 31th day of June. A new registration is hereby or orded* for said district. Those favoring said special tav shall vote a ticket upon which shall be written or printed these words "For Special School Tax". Those opposing said tax shall vote a ticket upon which shall be printed or writ ten these words "Against Special School Tax." ?
