Food Poisoning Cases Prompt
Extra Precautions In Kitchen
By MISS EMILY BALLINGER
Home Economic*
Extension Agent
Do you like your eggs hard
cooked? Government research
ers have found food poisoning
cases in the Northeastern part of
the United States that are related
to the consumption of eggs. Since
it is not clear how the salmonella
bacteria is getting into the eggs,
some persons have made the
recommendation that no one eat
fried eggs that are cooked for less
than three minutes on each side.
"That's going a little bit too
far," says Dr. Nadine Tope, ex
tension foods and nutrition
specialist at North Carolina State
University. First of all, the cur
rent problem has only occurred
in the northeast, and none of the
eggs sold in North Carolina
supermarkets come from pro
ducers or processors located in
the northeast.
Secondly, if an egg reaches a
temperature of 160 degrees, any
salmonella bacteria should be
killed. Dr. Tope used a special
thermometer and spent a
weekend recently cooking eggs.
The coolest part of her easy-over
eggs only reached a temperature
of 130 degrees. But her soft
cooked scrambled eggs, which
were very tender but not runny,
were at least 160 degrees. All
hard-cooked eggs, which were
cooked for three minutes, also
reached a temperature of at least
160 degrees.
ine type ot rood poisoning
caused by salmonella bacteria,
called Salmonellosis, produces
flu-like symptoms which last
from one to seven days. Very
young children, very old people
and the chronically ill are the
most susceptible to food poison
ing. It takes few salmonella
bacteria to make them ill, while
a healthy adult might be able to
eat a food with many bacteria
without becoming sick.
Any procedure which hard
cooks the yolks should be perfect
ly safe, and Dr. Tope feels that
softcooked eggs that have been
properly handled are safe for
healthy adults. "Maybe we
shouldn't feed soft-boiled eggs to
the very young and the very old
but we don't really know at this
point. There are many questions
that still have to be answered."
Salmonella is a problem in
North Carolina, but most of the
cases don't come from con
taminated eggs. The N. C.
Department of Public Health had
between 125 and 140 confirmed
cases of Salmonella each month
in 1987. "This is about 10 percent
of the total number of Salmonel
losis. Half of those outbreaks oc
curred from food eaten at home
and most of them are from cross
contamination," Dr. Tope says.
Any food can contain salmo
nella. Over the past 15 years ma
jor outbreaks of salmonellosis
have been traced back to
smoked fish, powdered milk,
poultry, chocolate, hamburger,

eggs, cheddar cheese, roast beef,
unpasteurized milk and pasteur
ized milk. These outbreaks have
been caused by improper pro
cedures used by the producer, the
food processor or at home. Thus
we find it very important that
food is handled properly.
