Even a working house wife whose time is limited can turn out Jelly that ts rich and clear by using the short-boil method with natural fruit pectin. We suggest you try using * powdered or bottled fruit pectin to make Jellies and jams of fresh color and fine flavor More over. you’ll find that these tested recipes are economical — they produce half again more jelly than the old-fashioned laborious methods, within fifteen minutes after the fruit Is prepared. Grape Jelly 5 cups juice 6ft cups sugar 1 box powdered fruit pectin Te prepare the juke. Stem about 3ft pounds fully ripe grapes and crush thoroughly. (Concord grapes give best color and flavor.) Add 1ft cups water; bring to boil and simmer, cov ered, 10 minutes. Place In Jelly clqth or bag and squeeze out juice. Measure S cups Juice Into a large saucepan. Te make the Jelly. Measure sugar and set aside. Place sauce pan holding juice over high heat. Add powdered fruit pectin and stir until mixture comes to a hard boil. At once stir in sugar. Bring to a full sidling boil and bell hard 1 minute, stirring con stantly. Remove from heat, skim, pour quickly into glasses. Par affin at once. Makes about 11 six-ounce glasses. Grape Jam 5 cups prepared fruit 7ft cups sugar ft bottled fruit pectin Te Prepare Fruit. 811p skins from about 3ft pounds fully ripe loose-skinned grapes. Bring pulp to a boll and simmer, covered, 5 minutes. 8ieve to remove seeds. Chop or grind skins and add to pulp. Measure S cups Into large saucepan. Te Make the Jam. Add sugar to fruit In saucepan and mix well. Place over high heat, bring to a fall telling boil and bell hard 1 minute, stirring con stantly. Remove from heat and at once stir In bottled fruit pectin. Then stir and skim by turns for S minutes to cool slightly, to prevent floating fruit. Ladle quitfkly into glasses Par affin at once. Makes about 12 six-ounce glasses.
