Must -southern farmers . recognize the desirability of , chilling pork quickly after butchering and of holding it at temperatures below 40 degrees Far enheit during curing. In many cases they have lacked equipment, and, consequently, have been ac customed to take their chances on the weather hoping for continued cold to follow hog-killing, time. An ice box designed primarily to meet the needs of southern farm ers who butcher a few hogs has been built and tested by engineers of the U. S. Department of Agri culture, who report that the box is inexpensive,, simple of .construc tion, and effective in providing safe cold storage for meat that is to be cured on the farm. The interior of the box is crib work of tw.o-by-four-inch lumber. The principal insulation is provided by- seven inchesof sawdust, and the box has a 4-inch layer of cork for floor insulation. The outside is of tongue-and-groove flooring or ceiling. For cheaper construction, shiplap will serve. The box may be made in various dimensions and does not require skilled labor in construction. This box holds 1,800 to 2,000 pounds of meat ami 1,600 pounds of ice. Engineers do not recommend a width of box greater than five feet. The-box may be higher, and longer than the test box to suit the convenience of the farmer or of the community. The box has a hinged. lid and is less convenient than the walk-in type with a door at the side.
