When meat is seared, a high temperature is used; and it has been learned that very high temperatures actually increase the loss of juices from the meat. This discovery has brought about a change In the cooking of meat by various methods, says Reba Staggs, home econo mist. Nowadays, the accepted method of cooking a roast is to use a constant low temperature. The oven may be preheated or not, as desired; but the temper ature should be regulated to re main the same throughout the entire cooking period. An oven temperature of 300 deg. F. Is re commended for beef, veal, lamb, ar.d smoked pork. Fresh pork roasts are best cooked at a tem perature of 350 deg. F. Ellijay Mrs. Ben Moffitt and daugh ter, Judy, of Ellijay and Frank lin, Route 3, have gone to Portsmouth, Va., to join Mr. Moffitt. Mrs. John Price, of Sedro Wooley, Wash., is visiting her parents, Mr. and Mrs. Fred Mincey, at their Ellijay home, and relatives and friends in Macon county. Mrs Lee Adams and several friends, of Spray, Ore., recently visited Mrs. Adams' sister-in law, Mrs Louin Young, of this section. Mrs. Adams is a former resident of this section. Car wrecks are not so unusual on the Ellijay road but bicycle wrecks are Jerry and Clifton Young were in the Higdonville community March 16, when the bike they were riding suddenly broke in two pieces. Clifton's leg was rather badly cut so that he had to lose a week from school. The Rev. Lee Crawford brought the wrecked bicycle and it's two victems home. Mr. and Mrs. Leslie Young and son, Jerry, and Charlie Moore, of Ellijay, spent Satur day in Sylva. They also visited Mrs. Young's grandmother, Mrs. W. P. Collins, at Gay.
