How should I prepare beets .or canning? A. Only baby beets should be canned. Before washing the beets, trim otf the tops leaving one inch of stem and all or root. Wash them carefully uj remove dirt and grit. Cover with boiling water and boil until skeins slip easily. This usually requires 15 to 25 minutes, de pending on the size of the beets. After the beets have buueu, skin and trim them. Baby beets can be canned whole; medium or large ones should be cut in Zi inch slices, halved or quar tered Pack them hot Into hot jars to y4 inch of the top, then cover with fresh, boiling water leaving '/j inch head space. Add 1 teaspoon salt to each quart jar, adjust lid and process for 25 minutes for pints and 55 minutes for quarts in a pres sure canner at 10 pounds of pressure.
