Another way to supple ment the protein of a bean dish is to serve a cheese or egg salad at the meal, or a milk and egg dessert like custard. Lima beans In tomato sauce is a popular main dish in which bacon is used for added flavor and nutritive value. NEW WAYS WITH BEANS There's no need to follow the old, slow routine of giving dry beans five hours or longer to soak up water they need before cooking. A short cut that the home cook can use to advantage takes only an hour, say food specialists. Here's how: Sort beans as usual, discard ing any bad ones, and wash to remove any grit. Boll two cups of dry beans two minutes In six cups of water. Remove from heat and soak one hour. Then be sure to cook the beans in the water they soaked in, for it has taken up some of the vitamins, minerals, and good bean flavor. Food specialists have tested this method with a number of bean varieties ? navy or pea bean, pinto, great northern, red kidney, and la ge lima. The quick soaking works well with alt these kinds. Food judges found that beans 01 all these varieties tasted as good or bit ter when quxkiy soared thai* when they were soaked over night in the usual way.
