Children of the Franklin Elementary School yesterday (Wednesday) presented performances of "The Three Little Pics" and "The Gallant Ta ilor, or Seven at One Blow" at the Macon The atre under the direction of Miss Alice Weaver, public school music teacher. This afternoon at 1 o'clock the two operettas again will be presented at the theatre for those who were unable to attend yesterday's performances. In the scene above, taken from "The Gallant Tailor", are fifth graders Survey results clearly indicate that home freezing has brought to home-makers a new and wel come concept of food prepara tlon, meal planning, food budg eting, and home management; however, there is evidence that further information is still needed if home freezing is to achieve its full potent ai m every home. Survey results also show the lack of appreciation and understanding as to what constitutes adequate packaging is chiefly responsible lor pack aging errors ? although cost and difficulty in purchasing and jo cating properly labeled mate rials are also mentioned. The homemaker knows that a block of ice can evaporate and that water in the form of ice can change from a solid to a vapor without passing through the liquid state. It is this char acteristic of the water found In frozen foods which makes nec essary the use of molsture vapor-proof packaging materi als In other words, a good packaging material sets up a barrier through which the moisture vapor from the frozen food cannot pass. The expression "molsture vapor-proof" has been used so widely that it might almost be inferred that ability to keep food moisture inside a package is the only important character istic of good packaging materi als. It Is just as important that they keep oxygen out ol the package; once inside, atmos pheric oxygen may be respon sible for discoloration of foods, or the development of rancidity and other off-Uavors. Selection of a wrapping mate rial completely impervious both to water vapor and to oxygen is still not enough; it must also be properly applied. If food is loosly wrapped, moisture vapor can still escape from Lhe sur face in the form of "cavity ice and collect In crevices and on the inner surface of a moisture vapor-proof package, with re sultant dessication of the froz en food. In addition to being impervi ous to water vapor and oxygen and pliable enough to make a , tight wrap, good packaging ma terials should have no odors or j flavors of their own. They j should be grease-proof, strong when wet, tough enough to re sist tearing and puncturing in handling, and have adequate stacking strength in the freez er. Sheet materials should have good "stripping" quality; they must cling closely without sticking to meats or other foods. Materials should not become brittle or crack at freezer tem peratures. Packages should be | made of materials easy to mark for Identification and designed for economy of space in the freezer. While a homemaker's stand ards of selection should be high, she must not expect the Impossible. A wrapping material may be water-vapor and oxy gen-proof, mold tightly to an irregular object, and have ex cellent stripping qualities? and still not be able to withstand a sharp bone. In wrapping meats, poultry, and fish, re moving bones or fins whenever possible, and providing over wraps for otherwise excellent wrapping materials should be standard practice. It is often economical, in the long run, to buy the best wrap ping materials. For example, a double wrap of waxed locker paper is recommended for short-term storage. A single wrap of one of several materi als which are effective for long-term storage will give bel ter protection than the double wrap of waxed locker, and will cost little if any more. carMcalLs SPECIAL MEET Plan To Discuss New Community Building On May 26 MRS.
