S hen-ill (County Home Agent; The abundance of apples this year has been a boon to pantry shelves, the family budget, and to menu planning in general. Apples are eaten to enjoy - they are not especially rich in any one vitamin or mineral, but are good "supporters" of a well-bal anced diet. The apple peel should be eaten, as It contains bulk for a healthy digestive tract. When the homemaker is prepai ; ing apple sauce, she should cut unpeeled apples into halves or | quarters, drop into water to which 'salt and vinegar have been added. I She can add water, if necessary, and steam until tender. Press I through a sieve, add sugar if de i sired, return to heat and bring ! to a boil. Pack into hot jars. Pro cess in boiling water bath 10 min utes. The return to the boiling water bath is an important step as mold often forms on the can ned apple sauce. Of course there s the old ' fashioned preventative of mold formation ? put a hot piece of cloth on top of the apple sauce just before sealing. The modern homemaker would not bother with the cloth. She will be canning apple sauce to save space in her freezer for . othe: fruits that are not so appetizing canned. So much for the apple sauce. why not try Apple. Betty for a good family dessert? APPLE BETTY 2 cups sliced, pared cooking ap pies 1 cup sugar ?2 teaspoon cinnamon 2 eggs 2/3 cup prepared sour cream 1 tablespoon lemon juice 1 cup dry bread crumbs y4 cup. melted butter Cook apples with 1/3 cup sugar and (4 teaspoon cinnamon until tender. Beat eggs and combine with 1/3 cup sugar, sour cream and lemon juice and add to the cooked apples. Continue cooking until mixture is well blended anci slightly thickened. Combine dry bread crumbs, 1/3 cup sugar, but ter, and l/4 teaspoon cinnamon. Alternate layers of crumb mix ture and apple mixture in a greas ed 1 quart casserole, using crumbs on top layer. Cover and bake in a moderate oven <350 degrees' for forty minutes. Serve either hot or cold, with cream or whipped cream. Yield: 6 servings. Then for a dessert that will bring "oh's and ah's" from your guests, serve. SPICED APPLE MERINGUE CAKES 1 pint water 1 cup sugar 1 cinnamon stick 8 drops red coloring 1 pint sliced apples 4 (1-inch) sliced pound cake 2 egg whites 2 tablespoons sugar Combine water, sugar, cinna mon and red coloring; boil for 10 minutes. Add apples and simmer 10 minutes, or until apples are soft. Arrange apples on top of each cake slice in overlapping rows. Beat egg whites until stiff. Add sugar gradually, continuing to beat until mixture stands in peaks. Spread meringue around sides of cake; leaving top uncov ered. Place on a cookie sheet and bake in a hot oven (450 degrees F.) for 5 minutes, or until mer ingue is lightly browned. Yield: 4 spiced apple meringue cakes. I " - " For the dessert rich in iron, remember Gingerbread. Ginger bread is always a good accom paniment for apples. And here's a gingerbread upside-down cake. Add mo lasses; blend. Sift dry ingredients and add alternately with the milk. Melt butter or margarine in a 9" square pan. Add corn syrup and nuts. Heat slightly and blend. Arrange apples. Pour batter over apples. Bake for an hour in pre heated 350 degree oven. Turn cake out of pan immediately after removing from oven. Serves 9, good with Cream Cheese Topping.
