Stone (seated) to Mrs. Charlotte Jones as they begin the tremendous task of mailing out the 10,500 premium lists for the 1957 N. C. State Fair to be held Oct. 15-19 in RaJeigh. A number from Ma con County are expected to enter the fair competition. Also, the | fair's "challenge exhibit" is being built here by local agricultural workers. (N. C. State Fair Photo). Maconians Busy Preparing For State Fair In Oct. Although the 1957 N. C. State Fair is a month away, Maconians already are busy preparing fo. the event. The fair's "challenge exhibit" is being built here for the western district under the supervision of the local Agricultural Workers' Council. A Raleigh extension ser vice official was here recently to help plan the exhibit, the theme of which is "Stronger Community Life". Dates for the fair are Oct. 15-19. according to County Agent T. H. Fagg. Several Maconians are expected to enter the many different fea tures of the fair. Aaron Hedden, of the Patton Community, who has won first place with his corn for the past two years, probably will head the list. A number of winners from Macon's own fair this month will be urged to enter the state com petition. $50,000 In Cash The new premium list for the state fair offers more than $50, 000 In cash awards to prospective exhibitors and the demand for the list is the greatest ever, ac cording to Dr. J. S. Dorton, man ager. He reports that more than five and a half tons of paper was required to print this year's edition of 10,500 copies. Newest department of the fair ? and one that should appeal to many here ? will be the expand ed "Village of Yesteryear", which displays many of the old timey tools, crafts, ana machines. This year, handicrafts have been mov ed to this department. Craftsmen and women will work at their benches throughout fair week and their handiwork will literally come into being before the eyes of the public. Copies of the state fair premium list may be obtained from the county agent's office. The U.N.C. Poultry And Egg Business Is Over The Hump Again All in all. it looks like the North Carolina poultry and egg business is over the hump, according to an N. C. State College poultry marketing specialist. Clayton P. Libeau warns, how ever. that Tar Heel poultrymen should realize that a good year pricewise is certain to be followed by a less favorable one. And in an integrated industry adjust ments are slow. The poultry operation must, Mr. Libeau declares, in addition to be ing efficient, be soundly financed. Production credit must be obtained at reasonable interest rates, and long-term debt obligations must not be heavier than can be carried In poor years. The marketing pro gram must also be better than the competition. Expansion, he adds, should be undertaken with these facts in mind. "It is wise In a year of good profits to set aside a reserve for debt payments for the coming year." Three Are Judging At Cherokee Fair County .*gent T. H. Fagg, Ken neth Perry, assistant agent, and Harry Stoudemire, farmer of the Carson Community, are judging this week at the 39th annual Cherokee County Fair. Mr. Fagg and Mr. Stoudemire are judging dairy cattle and Mr. Perry is assisting with sheep, hogs, and beef cattle. The fair opened Monday and closes Saturday. Press through a vegetable press or ricer or mash well. Scald the milk and dissolve the sugar and salt in it, add the butter, stirring until melt' ed. Add this mixture to the po tatoes, mix and beat until smooth. Separate the eggs and beat yolks well, add them to the potato. Add the nutmeg Beat whites stiff. Cut and fold them lightly into the. potato and pour the mixture into a buttered baking dish. Quicklv arrange the marshmallows one half inch apart on the top with the raisins in between the marsh mallows Place In a moderate oven and bake until the souffle is set and the marshmallows are toast ed delicately Serve at once.
