FINCH, Home | Service Director Virginia Electric And Power Company Puddings These two puddings are appetiz ing desserts for cool days, which really do not need a sauce or whip ped cream to make them delicious. However, extra food value and flavor are added by the use of a hard sauce or whipped cream. Orange Pudding Syrup: 1 cup granulated sugar, 1 1-2 cups water, 3 tbsp. buter, Grated dind and juice of 1 orange, 1-4 tsp salt, Grated nutmeg, if desired. Place the above ingredients in a 1 1-2 quart vapor-seal saucepan on a 1,000 watt unit, turn switch to "high," then allow~To come to a full rolling boil. Cake Mixture 1 1-2 cups pastry flour, 2 1-2 tsps. baking powder, 1-2 cup melted butter, 1-2 cup milk, 1-2 tsp. salt, 1-2 cup granulated sugar, 1 egg, 1-2 tsp. orange extract. Sift all the dry ingredients to gether. Add the eggs to the milk, then melted shortening. Beat slight ly. Turn the wet ingredients into the dry ingredients, beat until mix ture is smooth. Stir in flavoring. Drop batter into boiling syrup. Co ver immediately. When the steam comes vigorously from the steam vent, turn current off and continue cooking on stored heat for 45 min utes. Turn out and serve with or without whipped cream. Appetizing I.eft-Over Meats Chartreuse of Meat and Rice 2 cups chopped cooked meat (any kind) 1 tsp. salt, 1-4 tsp. pepper, 1-4 tsp. onion juice, 1 tbsp. chopped parsley, 1 egg, 3-4 cup fine soft bread crumbs, 4 cups cooked rice, Season meat and mix with the crumbs and beaten egg, add enough stock to make it pack easily. Line thoroughly buttered mold with three cups of rice, All with the meat mix ture, and cover with the remainder of rice. Cover tightly and bake at 35(1 degrees for one hour. Serve with tomato sauce. (The prepara tion may be done ahead and the covered mold kept in the refriger ator until time to serve). Chicken a la King Melt two tbep. butter. In It cook one cup canned mushroom caps, peeled and broken in pieces Also 1-2 green pepper chopped fine Aft er 3 or 4 minute* add 2 tbsp. flour, 1-2 tap. salt, stir and cook until frothy. Add 2 cup* rich milk and stir until sauce -boils Set over hot water. Add 3 cups cooked chicken (cut in cubes) cover and let stand until hot. Cream 4 tbsp. butter. Beat in yolks of 3 eggs, 1-2 tsp. onion juice, 1-2 tsp. paprika, 1 tbsp. lemon juice and stir into mixture. Continue stir ring until egg is set.
