Ways To Serve Left-over*
The proper use of left-overs can
mean a lower food bill at the end
of the month. There is an oppor
tunity for great variation; for ex
ample, the following will give one
suggestions as to how the left-overs
ma ybe used.
Meats: Rost beef, meat pie, stuf
fed peppers, croquettes, Spanish rice,
Italian spaghetti, loaf.
Lamb?Lamb stew, lamb cro
quettes, chartreuse of meat and rice.
Ham?Souffle, mousse, stuffed pep
pers, omelet, baked macoroni and
ham.
Veal?Veal pie, jellied veal, stuff
ed peppers.
Fowl?Chicken a la king, creamed
chicken, molded chicken salad, souf
fle, stuffed tomato salad.
Fish, baked or boiled?Croquettes,
timbales, scalloped, fish and celery
salad, cakes.
Breads?Dried out and ground or
rolled to be used for scalloped dishes
topping for casserole dishes, in meat
loaves, in bread puddings, toasted
crisp and served with bran at break
fast, cut in cubes or strips, browned
o. buttered and browned to serve
with soups. For buttered or cheese
toast. As a thickening in cheese
scuflle, custard or chocolate pie.
Crumbled for stuffings and dressing
in preparing fowls and meat.
Cakes?Foundation for fruit short
cakes; sliced and served with a hot
lemon or other fruit sauce; crumbled
and mixed with whipped cream, nuts
of fruit; slice and spread top with
u meringue, sprinkle with coconut,
brown in oven (a layer or jam jelly
may be spread on plain cakes, then
the meringue > Served with a cook
ed custard sauce over it. Cut into
strips and place around edge of mold
when making molded or congealed
desserts.
