Wednesday evening, January 21st, the Martin County Schoolmasters Club met at Jamesville. Dinner was served in the library by members of the Home Economics department. Plans for the physical education program were discussed. Several la dies from the different schools of the county were present. The basketball teams had a busy and successful week. On Monday night they defeated the Farm Life teams at Farm Life. Tuesday night they won over Robersonville here, and Friday night they won the con tests with Bath, there. Wednesday night of this week they will play Bear Grass at the gym in Williams ton. ' The school paper, School Flashes, was distributed to the students Fri day The Senior class publishes it every two weeks. The Junior Class gave a play stressing good table manners for the chapel program last Friday. The P.T.A. will meet Thursday evening, February 5th, at eight [o'clock. The Junior class has been rais ing money for the annual Junior Senior banquet, but the members of the class have decided to donate part of the funds to the Red Cross and to give a party in the gym for the Sen iors. By Irene James, Home Service Director, Virginia Electric And Power Company "WHITE POTATOES TAKE A BOW" A potato a day is now one of the requisites for a day's balanced diet ?as it offers generous shares of cal cium, phosphorus and iron, also vi tamins A, B, C and D. And, when you add butter, milk or cream, you have a dish which contains every important food element needed for good health and increased energy. Dutchess Potatoes These may be used to dress up the meal a bit. 1-3 c milk 2 tbsp butter 1 egg, separated 2 c hot riced potatoes . 1 tsp salt i 1-4 tsp pepper Cook potatoes over low heat in only enough water to cover bottom of pan to prevent sticking. When [done, drain and force through ricer. Heat milk until butter melts, add to potatoes with the seasoning and the well beaten egg yolk. Beat well. Shape in form of nests, using a pas try tube (or form in small mounds making a deep depression). Brush over with beaten egg white. Brown in hot oven, remove to hot platter and fill with seasoned hot green peas. Potato Chowder T slices salt pork 1 sliced onion 2 c diced potatoes 1 c corn 4 c scalded milk Salt and pepper 3 tbsp butter 6 soda crackers Cut pork in small pieces and fry until crisp. Remove bits of pork. Add onion and cook slowly for five min- j utes. Do not brown. Parboil potatoes I for five minutes in water to cover.1 Add potatoes to fat with two cups j jof water (including the water in [which they were cooked.) Cook un-| til potatoes are tender, add corn and ( milk. Season with salt, pepper and butter. Pour over crackers in soup j plates and sprinkle with the bits of i salt pork. Serves 6. Dainty Potato Buns 1-2 c mashed potatoes 1-2 c milk, scalded 1 yeast cake 1-4 c lukewarm water 4 c sifted enriched flour (about) 1 egg well beaten 2 tbsp sugar 1 tsp salt 3 tbsp melted butter Combine potatoes and milk. Cool to lukewarm. Soften yeast in water and add to potatoes. Add enough flour to make a batter, beating well Cover?let rise in warm place until light. Add egg, sugar, salt, butter and remaining flour to make ? soft dough. Knead lightly until smooth Place in greased bowl. Cover, let rise again until double in bulk. Roll | out 1-2" thick. Cut with floured bis cuit cutter. Place in greased pan. Let I rise until double in bulk. Bake in hot | oven 400*?15 min. or until done. Makes 12 to 15 buns. Chocolate Potato Cake 1-2 c butter 1 f auger su 2 eggs, well beaten 1-2 c milk 1-2 c hot riced (or mashed) pota- | toes 1 c flour 2 tsp baking powder 1-2 tsp cinnamon 1-2 tip cloves 1-2 tsp nutmeg 1-2 c grated chocolate 1-2 c chopped nut meats Cream butter, add sugar gradual-1 ly, beating constantly.
