the home of Mrs. M. P. Wheeler, Mrs.
Benjamin Grimes, the former Miss
Ruth Hurley, was honored at a
shower given by the hostess and the
joint hostess, Mrs. J. M. Ward.
The living and dining rooms were
thrown ensuite for the occasion
Fresh cut flowers were effectively
arranged for the shower. Lighted ta
pers burned on the mantel and table
of the dining room and into this soft
background the honoree and the
guests were invited. Mrs. Grimes re
ceived an assortment of useful gifts.
Later the guests enjoyed refresh
ments that completed the green and
white color scheme used for the
shower.

GARDEN DOING?

needed to provide health and happi
ness. Food is a great weapon and
will help win the war, not only for
our own people, but for the starving
population of Europe. Throughout
the summer months your "Victory"
garden will help release millions of
cans of commercially canned foods
for relief of the undernourished fam
ilies of adults and children?in Eng
land, in France, in Norway and in
many other countries across the
ocean.
Growing food is not a showy job
and requires a lot of hard labor but
it is well worth our efforts when
we see such dishes as these grace our
tables and think "I have helped my
fellow human beings in the starving
countries."
The vegetable is a very royal per
son and should be treated so, as he
gives us our daily health protection
through vitamins and minerals. Cook
them in as little water as possible in
as short a time as possible without
peeking or stirring. You will be
building your families' health, thus
contiibuting to the health of the na
tion
Spanish Carrots
2 bunches carrots
1-2 clove gat lick
2 tbsp butter or margerine
3 4 tsp salt
1-8 tsp bldck pepper
1 c an (4 oz.) pimientos
1 tbsp chili sauce
Co<>k carrots until tender. Either
cut into small pieces or put through
ricer.- Cook garlic in butter for three
minutes. Remove garlic and add car
rots, salt, pepper, chopped pimientos
and chili sauce. Heat thoroughly and
serve. Serves 6. A good source of
vitamin A
Beets in Demon Sauce
2 1-2 cups cooked sliced beets
1 2 cup corn sirup
1 tbsp corn starch
I-2 tsp salt
2 tbsp butter
1 -4 cup lemon juice
I tsp grated lemon rind
I 2 cup juice drained from beets
Peel, slice and cook beets in small
amount of water. Drain beets, and
reserve the liquid. Place sirup, corn
starch and salt in a saucepan, and
mix well. Add (he juice drained
from the heels and stir?blending
thoroughly. Cook over low heat stir
ring constantly until the mixture
boils and becomes clear and thick.
Remove from heat and stir in but
ter, lemon juice and rind. Add drain
ed beets and simmer 10 minutes to
blend the flavors. Serves 4 to 5
Plantation Pie
1 1-2 cups cooked lima beans or
pesa
1 cup cooked wax beans
II-2 cups cooked carrots
1 tbsp grated onion
1 2 tsp paprika
3 cups medium white sauce
Peanut butter crust
4 tbsp chopped bacon
Combine vegetables and season
ings with white sauce, pour into well
greased 1 1-2 qt casserole. Make pea
nut butter crust: Using 4 tbsp. pea
nut butter in place of shortening,

about 1 1-2 inch thick to fit casser

Beans Turquc
1 lb. green beans
3 tbsp chopped onion
1 clove garlic, mashed
2 tbsp cooking oil
1 large tomato or 1-2 cup tomato
juice
1 tbsp white wine, optional
1 tbsp chopped green pepper
1 tbsp chopped parsley
1-4 tsp powdered marjoram
1 -8 tsp cinnamon
1 -8 tsp nutmeg
1 8 tsp allspice
1-2 tsp salt
Clean and cut beans diagonally;
coo kuntil tender. Meanwhile cook
onion and garlic in oil over low heat
for 5 minutes. Add tomato peeled
and cut in pieces (or tomato juice),
wine and seasonings. Simmer 10
minutes. Stir in cooked beans, cov
er, simmer 5 minutes longer. Serves
four

being pushed ahead, and in a short

2 tbsp butter
2 tbsp flour
1 2 cup milk
1-cup tomato pulp
1-2 cup broken macaroni
1-2 tbsp melted butter
9 eggs, separated
1-4 lb. Chateau cheese, finely cut
Melt butter in saucepan, add flour
and blend. Add milk and tomato
pulp, silrring constantly, until thick
ened. Add finely cut cheese, salt und
pepper to hot mixture and stir un
til cheese is melted. Cook macaroni
in suited water until tender. Drain,
add butter, tomato mixture and well
beaten egg yolks. Fold in stiffly beat
en egg whites. Turn into greased
baking dish and bake until firm.
Serve at once. Serves 4 to 6.
