SWEET POTATOES
Now that sweet potatoes are on
the market in greater volume, we
have an opportunity to include ,n
oui diet a tood rich in Vitamin A
and supplying some of all the
other important food nutrients.
Here is an interesting sugges
tion for a sweet potato dish and
one that would bring out the fla
vor of roast pork or baked ham.
SWEET POTATOES AND
APPLES
ti medium size sweet potatoes,
c< ioked
1 1-2 cups thinly sliced apples,
cooked
1-4 cup apple water or water
1-2 cup white sugar
1-2 cup or more brown sugar
fi tablespoons butter
Peel and cut potatoes into 1-4
inch slices. Place alternate layers
of sweet potatoes and apples in
ja greased baking dish. Sprinkle
the layers with sugar and dot
I with butter. Pour the apple water
liver them. Bake in a moderate
oven 350 degrees for J hour. If
the apples are not tart, sprinkle
, them with lemon juice.
SWEET POTATO PIE
4 tablespoons butter
I -2 cup of sugar
3 tablespoons lemon juice
1 tablespoon grated lemon rind
3 eggs separated
1- 4 teaspoon cinnamon
2 cups mashed sweet potatoes
1 cup top milk
1 unbaked pastry shell
Cream butter until soft, add j
sugar gradually and continue to i
cream until sugar is blended Add j
lemon juice and rind. Add beaten
egg yolks, cinnamon, potatoes and
milk. Mix thoroughly and fold
m stiffly beaten egg whites. Pour
into pastry-lined pie plate. Bake
in hot oven (425 degrees F) 10
minutes, then reduce temperature
to 350 degrees K., arfd bake about
40 minutes.
SWEET POTATO BISCUITS
3-4 cup cooked sweet potatoes
4 tablespoons melted butter
2- 3 cup milk
I 1-4 cups flour
4 tablespoons baking powder |
I tablespoon sugar
1-2 teaspoon salt
Add butter and milk to sweet
potatoes. Add dry ingredients to
