Answer: I may as well admit that I do not know how to cure a husband of the untidy habit. In fact, I have just such a man myself. It does help, think, to have a plenty of ash tray convenient and to keep the soiled clothes hamper in the bath room, but I have long ago given up the hope- Sarah Ann's Cooking Class The kind of shortcakes like moth er used to make is still in vogue; this tvoe is made like Die Dastrv. But if you go in for the modern touch, then your short cake must be a light sponge caKe or a delicate white one When shorttakes are mentioned strawberry shortcake is probably the one which corner firt to our minds. There are many other kinds, such as peach, apricot, cherry, banana, etc. Shortcake can be served the year round. Shortcake N'o. 1 3 cups flour. 2 teaspoons baking powder. 1 teaspoon salt. 1 1-3 cups shortening. . Ice cold water to mix. Sift the tlour and salt into a bowl, chop in shortening with a knife until well blended. Add water to form a dough, cutting and mixing the paste thoroughly. Hour a board and roll paste out very thin. Fit into pie plates, brush with melted butter. Bake in an oven 425 degrees for 15 minutes. Cool. Fill one shortcake with fruit and whipped cream, cover with inverted pie crust. Cover with whjpped cream and garnish with fruit used. Shortcake No. 2 2 cups sifted cake flour. 2 teaspoons baking powder. 1-2 cup sifted sugar. 3-4 cup milk. 3 egg whites. 1 teaspoon vanilla, Sift flour once, measure and add baking powder, Sift 3 times. Cream shortening, add sugar gradually, cream together until light and fluffy. Add flour alternately with milk, a small amount at a time. Beat after each addition until smooth. Add vanilla. Fold in beaten egg whites. Bake in 2 greased cake pans in a mod erate oven. Lay fruit and whipped cream between layers. Cover with whipped cream and fruit. Serve in wedge shape pieces. Shortcake No. 3 2 egg yolks. . 5 tablespoons cold water. 7-8 cup sugar. 1 1-3 cups cake flour. 1 tablespoon lemon juice. 2 teaspoons baking powder. 1-2 teaspoon salt. 2 egg whites. Beat the egg with a rotary beater. Add writer and then the suirur grad ually and continue beating. Add lemon juice. Sift flour and measure. Add baking powder and salt. Sift again.
