Pasteu- 'nh-'-fl in bulk, in r,i" a local dairy, ;"i lor one out- del ermine the "I'hrcak disclos "inbtions at the pur chased were very unsatisfactory; that the milk at this dairy was held without cooling for several hours between milking and pasteuriza tion, and that, while the dairy had a capacity for only 100 gallons daily, it was undertaking to pas teurize from 350 to 400 gallons daily, to meet the heavy demands in short order. Around forty outbreaks of milk born diseases occur in the country annually, and 1943 figures are given as an example of causes and effect, to give the public an idea ot jut why precautionary' measures ate so vitally necessary in the handling of milk products for human con sumption. The diseases enumerated in the 1943 outbreaks are just a few of the many which may result from drinking impure milk. In considering the dangers of bad milk, let us remember that, in order to insure full protection, we should always use Grade A. pasteurized milk, because pasteurization is an added protection against disease Nor must we depend solely upon pasteurization, as milk, after it has been pasteurized, may become con taminated by improper handling Haw milk may become contami nated between milking and deliv ery, even though U conies from a healthy cow. That is one of the strongest arguments in favor of pasteurized milk. The importance of keeping milk at proper temperature should al ways he considered. It should le kept cool from the barn to the distribution plant, and the consum er should place it in the refrigera tor or ice box immediately upon delivery and keep it there until it is consumed, to prevent the growth of bacteria that may be a disease-carrying agency. This plac es a responsibility on the consum er, for his own individual health, as well as upon the producer and distributor for the health or all who use their product. There should be Ho neglect of any of the factors that make and keep milk safe, whether in the hands of the pro ducer, the distributor, or the con sumer. The time to place milk back on a safe basis, since the war is over, is now, by immediate abandoning concessions that were made as a wartime expediency. There is no valid reason why such concessions should not be written off. I repeat, for emphasis, that we should return to the use of Grade A Milk, with the added precaution of pasteurization, in order that our milk supply may be as safe as as human ingenuity can make it. To drink any other kind of milk whether in war or peace is run ning a risk we cannot afford to take one which Public Health, in fairness to the people, could not sanction. It is earnestly hoped that "barn yard" milk for distribution and human consumption very shortly will be a thing of the past in North Carolina, and that we will return to the milk standards that were achieved only after a long and hard tight. We may well thank Provi dence that we suffered no more than we did from the concessions that were made never with Un sanction of the State Hoard of Health as a sacrifice to the god of war. Something went awry with the controls. It turned grace fully and came back across the Midlands of England, turned north at Liverpool and flew over Ireland. The explanation was given that "gremlins'" had taken over a dam aged plane after the crew bailed out. Because of the lethal load it carried air raid sirens were sounded in every town and village along its course. The ghost ship winged out over the Atlantic where fighters finally caught it and shot it down.
