COOKING FOR TWO What's Cookin' Poached Flounder With Oysters 4 fillets of flounder 3 tablespoons butter or marga rine 2 tablespoons lemon juice Salt and pepper 33 cup dry bread crumbs 12 Pint oysters 2 teaspoons W o r c c stershue sauce Salt and paprika Place flounder fillets in pan with three tablespoons of butter or margarine and add lemon juice. Sprinkle wita salt and pepper. Cook for 20 minutes, turning once. The liquid should be almost entire ly absorbed. Place on serving plat ter and keep wnnn. Place two table spoons of butter or margarine in a pan with the bread crumbs and J the fish with buttered crumbs. Poach oysters in their own liquid until edges curl, adding Worces tershire sauce, salt and paprika. Pour around the Ash and serve. Do you know how to select fish? The big trouble is I hat it 's hard lo find those nice little cans which contain just enough food for two. Then conies the problem of what to do with what's left, if you open a big can. I It lakes careful planning, as does j every part of cooking for two, but it can be done. If you keep the left-over food in question well and lightly covered in the refrigerator, it will keep nicely for several days. Ihus, you needn't serve the same thing two or three nights running. Let's just take a big can of sauer kraut for an example and show how it can be used up by two people, with no boredom or complaint from anybody How about spareribs and sauer kraut for the first night? It's one of the worlds most delectable dishes. Baked Spareribs and Sauerkraut 1 For Two 2 cups sauerkraut 1 lb spareribs. Salt Pepper Place sauerkraut in shallow bak ' us Pan. Sprinkle spareribs with alt and pepper, and a light dust ing flour if desired, and place on lop of the saeurkraut. Bake in a moderate (350 degree) oven for one hour. Then a couple of nights later you could serve ihese quick and easy Mashed Potato Nests. They make a good main dish :?or a meat less dinner, with their flavorful combination of sauerkraut and cheese. Plan to have mashed pota toes the night before and to have same left over, so you'll be set for this dish. Mashed Potato Nests 23 cup sauerkraut teaspoon shortening or drip pings 1 tablespoon finely diced onion 1 tablespoon finely diced green pepper 13 cup' grated sharp cheddar cheese 1 egg yolk, well beaten 1 cup warm mashed potatoes Grated cheese for top Drain sauerkraut and cut into smaller pieces with a pair of scis sors. Melt shortening in frying pan; add onion and green pepper and satue five minutes. Add sauer kraut and cheese and mix well. Add beaten egg yolk to the warm mashed potato and mix well. Make two mounds of the potatoes on a greased baking pan and shape a well in the center with the back of a spoon. Brush the nests with melted butter or margarine. Fill each nest with half the sauerkraut mixture. Top with grated cheese. Bake in 425 degree oven for 20 minutes. Here's the third suggestion.
