This rtcipe has everything because the ni'neemeat teams up with another favorite, cheese cake. It's a wonderful dessert if you're having holiday company because it's so rich and tasty. The mincemeat used in it is the "dry" or condensed kind that is disl ijict- ly American; it was first made in this county in the 1890's and it's been a fine ready-to-use product ever since. You'll be interested io know that the basic ingredients of a nine-ounce package of mince meat are: Fresh apples, two kinds of raisins, currartis, orange and lemon rind, brown sugar, distilled white vinegar, choice eider, salt, a small amount of beef, choice spices. v MINCEMEAT CHEESE CAKE (REFRIGERATOR-STYLO Ingredients; 1 nine-ounce package mincemeat, 1 cup water,'' i'wie bach crumb" mixture (see recipe below) 1 cup cold water, 2 laBtf" spoons (2 envelopes I unflavored gelatin, 2 eggs (separated), 34 cup sugar, '.6 teaspoon suit, 4 three-ounce packages cream cheese (at room temperature), 1 teaspoon lemon rind, 2 tablespoons lemon juice, Ms cup chilled evaporated milk (whlped) or a't cup heavy cream (whipped). Method: Break mincemeat Into pieces in small saucepan. Add 1 cup waterPlace over medium heat and stir until lumps are thor oughly broken. Boil briskly 2 minutes. Cool. Press zwlebach crumb mixture on sides und bottom of 8" spring form pan, saving Vi cup crumbs for top, Put '-i cup cold water in mixing bowl and sprinkle with gelatin. Put egg yolks in top of double boiler and beat slightly; mix in well remaining i cup cold water; add sugar and salt and mix well. Cook over simmering water until mixture thickens slightly, about 5 minutes. Pour over softened gelatin, stirring until dissolved. Cool. Cream the cheese until fluffy. Slowly mix in gelatin mixture. Thor oughly blend in lemon rind and juice. Chill until mixture thickens slightly. Mix cooled niincemeat into gelatin mixture. Fold in whipped evaporated milk or heavy cream. Then fold in egg whites which hava been stiffly beaten. Pour into crumb lined pan. Sprinkle remaining crumbs on top. Chill in refrigerator until firm, about 2 to 3 hoiirs. ZWIEBACII CRUMB MIXTURE Ingredients: '1'. 4 cup firmly packed zwiebach crumbs (about 15 zwiebach); V4 cup sugar, '4 teaspoon cinnamon. l4 cup butter (melted).
