Olive plant is in the heart of the eastern North Carolina early cucumber belt, in a town of about 3,200, of whom it emplys di rectly in the pickle , plant about 150 the year round, and puts around $120,000 wages into trade channels, about 85 of the manufacturing money. Also, it is putting $350,000 into farmers' pockets in 23 coun- ties of the state from' the current ! crop. In fact, almost 80 of the cucumbers used In Mt. Olive's half dozen brands .come from some where else, most of them 100 miles away in the piedmont hills. For there the Warts are bigger, growth easier to control, water content is less, temptation to sell slick skin- i.ed cumbers on the market not present, and the yeast content . . . Pickle men will tell you, simolv and earnestly, that the good Lord put yeast Into the skin of cucumbers especially, and only to make pickles. These facts are true, scientifically. Of all pickle material only cucum bera have an experimental vari able of natural yeast content; the yeast is in the outside skin where it can be easily 'got at in preser ving processes; and cucumbers really make good pickles. Mt. Olive Pickle Co. recently in troduced the assembly line to pick le making, 'among the first fo a dapt the new "pickle, pasteurizing ' method. One difficulty Mt. Olive has un der control but far from solved is the question of keeping warts On cucumbers. In the immediate Mt. Oivle area, bumpy cukes .are not popular . far from it. For fresh consumption cukes are as slick as Uncle Harrv's bald head. Growers love them for two reasons, first, they are quickly grown, and second they will bring a never-predictable price on the auction market. A. J. CAVENAUGH Walluce, N. The fact that the season, over all income per farmer of commer cial cukes never equals the con tract of pickle cukes never fazes the cuke grower. For he is a born ffamhler. and cukes, one of the quick, short season crops, are the idle chips for his agricultural poker game. He -takes a trimming four years out of five at the hands of Mother Nature and from those ,ho know selling markets better than ne. but" he has his fun. Mt. Olive, of course, takes up a bit of that beating by going on the market to round out contract short ages. . , Of the three-auarter billion pick. les produced at the Mt. Olive plant paoh vear. only a quarier-uimuii are used straight from the field at Hmp A half-billion are packed neatly in brine tanks cover ing almost two acres back of the plant safely and hygenically plant in water, salt, and their own yeast to await the pleaiisre of the pickle packing pasteuriser inside.
